Food safety has become an important issue in the world,which concerns everyone's life,impacts our economy and has a certain influence on politics and culture.People all over the world are facing together the challenges of food safety,which is also an issue to concern and consider.With the continuous development of our economy and living standard,food safety that closely links with the direct interests of people has caused wide public concerns and expectations.Some problems have appeared in food safety in China.And there are many kinds of reasons.First,the standards of food examination are insufficient.The methods of examination generally focus on the final products,instead of the whole process of food manufacturing.Second,the examination programs of Disease-causing organisms are not comprehensive.Some dangerous factors cannot be found in time.Therefore,there is a lack of controlling measures to the existing and coming problems of food safety.Third,the governmental departments should strengthen the inspection of food examination and make the standards of food examination to refine the systems on food standards.Fourth,there are also problems in the inspection and testing organizations.America and European countries have earlier solutions on food safety and more sophisticated managing experience.They propose that we can have food safety conditions by making a system of laws and regulations both up and down,defining strictly the concerned food concepts,making HACCP management system appropriately in each industry,following the rules and making accountability system.Based on the investigations in XX province of the current situation of contamination by disease-causing micro-organisms in some food,the contamination by disease-causing micro-organisms in XX province is the same as that in national report that food that carry bacteria is a major problem.In the samples of certain food,the rate of food contamination is quite high.For example,the rate of bacillus cereus in infant or baby food is up to 25.42%,the rate of pseudomonas aeruginosa in barreled drinking water is up to 23.73%,the rate of vibrio parahemolyticus in water products is up to 15.18%,and the rate of staphylococcus aureus rosenbach in puffing food is up to 17.5%.the rate of disease-causing micro-organisms in breeding section is higher,up to 18.80%.The rates in wholesale market,plant,and convenience or retail shop are up to 28.57%,26.53% and 17.02%.Bacteria exist in every step and every kind of food in the samples.Currently,food safety controlling methods that are quite influential in food industries and research fields include risks analyses method of food safety,operations and documentation standards,hazard analysis and critical control points methods and systems,food safety stakeholders and so on.Based on serious study and present detailed information,the paper gives some advice to food safety security,such as expanding the food testing programs and methods,evading the abuses of the inspection and testing organizations,building effective resource systems of food safety and so on.
