Efficient and reliable analytical methods and techniques is important guarantees for food safety.The paper does some research on simultaneous detection of chlorite,chlorate,perchlorate,and bromate in processed seafood products and simultaneous detection of monosaccharides and small molecule oligosaccharide in coffee beans and its products.Then,make a simple inquiry into real-time direct analysis-mass spectrometry?dart-ms?technology of amino acids rapid determination in black garlic,the specific contents are as follows:1.In this work,a analysis method for chlorite?ClO2-?,chlorate?ClO3-?,perchlorate?ClO4-?and bromated?BrO3-?in seafood processed products based on ion-chromatography-electrospray tandem mass spectrometry?IC-ESI-MS?has been established.Pre processed sample were separated on IonPacAS16?250mm×2mm?analysis column by gradient elution with 0.38m L/min KOH generated from an eluent generator cartridge?EGC?.The limits of detection is 0.01–0.5?g/L,under optimized conditions,the linear correlation coefficient is greater than 0.999 and the recovery rates from spiked standard samples were in the range of 89.6%-96.4%with RSD in the range of 3.7%-5.3%?n=6?.This method was proved to be accurate and sample.It can be applied for simultaneous determination of chlorite,chlorate,perchlorate and bromated in seafood processed products.2.A method has been established for simultaneous determination of galactose,arabinose,glucose,sucr,xylose,ribose,mannose,and fructose in coffee beans and it's products by using IC-MS.Crushed samples were extracted with deionized water using untrasonic-assisted extraction.The hydrolysate was separated on CarbopacTM PA20?3*150mm?analysis column by gradient elution with KOH eluent generated from EGC part,the flow rate is 0.38mL/min.The suppressor is connect to extra water source and to take post-column rehydration way to supply Na+source.Under the optimal conditions,the linear concentration ranges of galactose,arabinose,glucose,sucr,xylose,ribose,mannose,and fructose were 0.055.0 mg/L with the correlation coefficient greater than 0.999.The recovery rates from spiked standard samples were in the range of 88.0-97.7%with reproducibility?RSD?is between 2.36-3.70%?n=6?.This method can fully solves the false positives problems of different sugars in carbon content and can be applied widely and suitable for simultaneous determination of sugars in coffee beans.3.The preliminary study on rapid determination of amino acids in black garlic by real-time direct analysis-mass spectrometry?dart-ms?method.The human essential amino acids are rich in black garlic.At present,the main methods for the amino acids detection of amino acids is automatic amino acids analysis apparatus which is tedious procedure and high cost.In this paper,based on the dart-ms technology to creating a rapid accurate and economic method of amino acids detection.The method can be completed 4 samples detection within 5minutes.Now the research has been done on rapid screening of amino acids in black garlic and semi quantitative.Further exploration is needed.
