Throughout the ages,food safety has always been the focus of attention.Polychlorinated biphenyls?PCBs?are a large,versatile,and preferentially controlled,persistent organic pollutant.Its physical and chemical properties are highly stable,difficult to degrade in the environment,widely present in a variety of environmental media;has a strong fat-soluble,and thus can be highly concentrated by the food chain biological.Diet is the main way for the general population to ingest polychlorinated biphenyls,especially animal-derived foods.In this paper,we selected 20 kinds of foods for meat,eggs and milk foods with high consumption of residents in Beijing.The pollution characteristics of PCBs in three kinds of foods were determined by GC-MS,and in order to assess PCBs of day exposure risk.The method of gas chromatography-mass spectrometry?GC-MS?was used to determine the content of 28 kinds of polychlorinated biphenyls?PCBs?in the world.The results showed that the total content of PCBs in fat meat samples was higher than that in lean meat samples.And it is suitable for the total content of PCBs in the same kind of meat.The total content of PCBs in the yolk is larger than that of the whole egg and albumen.but the average content of PCBs in the dairy samples in the Pure milk is larger than that of the yogurt.Chlorinated biphenyls are mainly concentrated in trichloro to heptachlorobenzene,accounting for the total PCB content of 70%or more.The average PCBs of the meat samples is 0.638 ng/g wet weight?9.062 ng/g fat weight?,that of the whole egg is 0.657 ng/g wet weight?5.185 ng/g fat weight?and that of the milk sample is 0.884 ng/g wet weight?20.268 ng/g fat weight?.They are lower than EU No.1259/2011 standard limit?40ng/g fat weight?.For the exposure risk,the toxic equivalent of the coplanar PCBs of the three samples of meat,eggs and dairy was in the order of2.171,0.814 and 0.397,and complete to the allowable limits for dioxin-like substances developed by WHO in 2002,there is a greater risk of exposure to meat samples in Beijing.The median risk of carcinogenic risk was 6.542×10-7,2.443×10-7,4.186×10-7,respectively,less than the reference value of 1×10-6;non-carcinogenic risk were0.033,0.012,0.021 were less than the standard reference value,indicating that the health risk is small;but the three types of samples at the same time consumption of carcinogenic risk of the median of 1.317×10-6 greater than the risk of cancer risk reference 1×10-6,so need attention.
