In this study,the use of sodium alginate,chitosan and pullulan polysaccharide was used to study the effects of different treatments on the antioxidant properties of Zizphus jujubamill cv.lingwuchangzao during low temperature(0-4?)Total phenolics,total flavonoids,polysaccharides,cyclic adenosine monophosphate,triterpenoids,antioxidant enzymes and antioxidant capacity,and to explore the correlation between the three.The results are as follows:(1)The results showed that the three kinds of coating treatments were effective in maintaining the high level of antioxidant content in Zizphus jujubamill cv.lingwuchangzao during storage at low temperature(0-4?),and inhibited the total flavonoids,Total phenolics,cyclic adenosine monophosphate,polysaccharides,triterpenoid compounds decreased.The contents of total phenolics,total flavonoids,polysaccharides,cyclic adenosine monophosphate and triterpenoids were significantly higher than those of the control group(P<0.01).Among them,the effect of chitosan coating was the most significant(P<0.05).(2)The results showed that the three treatments significantly retarded the decrease of SOD and CAT activities in Zizphus jujubamill cv.lingwuchangzao during storage at low temperature(0-4?),and effectively inhibited the activity of antioxidant enzymes PPO,POD activity increased.(P<0.01).The activity of PPO and POD was lower than that of the control group(P<0.01).Among them,chitosan coating and seaweed The effect of sodium phosphate coating was the most significant(P<0.01).(3)The results showed that the three kinds of coating treatments could effectively reduce the antioxidant capacity of Zizphus jujubamill cv.lingwuchangzao during storage at low temperature(0-4?).At the end of storage,the antioxidant capacity of each treatment was much higher than that of the control group(P<0.01).Among them,chitosan coating had the best effect.(4)The correlation analysis between antioxidant substances,antioxidant enzymes and antioxidant capacity of Zizphus jujubamill cv.lingwuchangzao showed that the total phenols,total flavonoids,cyclic adenosine monophosphate,polysaccharides,triterpenoids and antioxidant(P<0.01).The correlation between SOD,CAT,POD and antioxidant capacity was significant(P<0.05)or extremely significant(P<0.01).In conclusion,the treatment of sodium alginate,chitosan and pullulan coating significantly inhibited the loss of antioxidant and the decrease of antioxidant enzyme activity in Zizphus jujubamill cv.lingwuchangzao and delayed the decrease of antioxidant capacity The further development and utilization of Zizphus jujubamill cv.lingwuchangzao provides a theoretical basis.
