The wild,eco-farming with buried pipeline in mangrove and pond-farming Bostrychus sinensis were studied as research materials. The study compared the differences in their morphology, muscle texture, nutrient composition, blood physiological and biochemical indexes, and explored the impact of pollution factor(sulfide, acid)in aquaculture water of mangrove on the blood physiological and biochemical indexes of Bostrychus sinensis. The purpose of this study was to understand the effects of different growth environment on the form and quality of Bostrychus sinensis, thus providing the basic data for creating brand for mangrove eco-farming Bostrychus sinensis and marketing and application of eco-faming technology and offering basic materials for standardization quality control of marine products. The study results are as follows:1.Difference in the ratio of the measurable characters of the fish were significant except for the ratio of head length/body length.Morphological difference of the fish in three different groups were significant.Fish raised in ponds differs morphologically from fish in other two groups mainly in fish body, and wild fish differs morphologically from fish raised with eco-farming method mainly in tail. The discrimination formula established by this study has got good discrimination accuracy as 96.4%.Morphologically,wild fish was similar to the fish raised with eco-faming method.2.The muscle texture indexes and the collagen content between wild and ecological cultivated Bostrychus sinensis were similar, and both are higher than that of Bostrychus sinensis cultivated in the pond. The content of crude fat in pond cultivated Bostrychus sinensis was significantly higher than that of wild Bostrychus sinensis. There was no significant difference in most muscle amino acid content and total content among the three groups.According to AAS and CS,the first limiting amino acid of Bostrychus sinensis was tryptophan(Trp).EAAI in wild Bostrychus sinensis was higher than those of two cultivation groups.Muscle EPA+DHA content in wild and ecological cultivated Bostrychus sinensis was remarkably higher than that of pond-farming bostrichthys sinensis.Total PUFA amount in muscle n-3 group in wild and ecologically cultivated bostrichthys sinensis was much greater than that of pond lived bostrichthyssinensis, the wild and ecological cultivated Bostrychus sinensis had better muscle texture indexes and health value.3.RBC in three different groups was pond cultivation greater than ecological farming and wild farming, and there were significant differences in the percentage of neutrophils, lymphocytes,TP and FRAP between the wild and different cultivation models, wild groups physiological health were better than farm groups.4.When the sulfide concentration was changed from 1225?g/L to 3000?g/L and pH was changed from 4.0 to 5.5,SOD,FRAP,GST,RBC and WBC of Bostrychus sinensis have significant changes. There were some dose-effect and time-effect relation. While the sulfide concentration was 500?g/L or pH was 7.1,there was little influence, these did not affect the Bostrychus sinensis ecological farming activities.
