The resource of chinese jujube is very rich in shanxi province. The amount of substandard Chinese jujube is also abundant because of influence of bad weather in harvest season. In order to make better use of substandard jujube, the study was conducted to investigate the effect of jujube powder in replacement of maize grains on feed efficiency, growth performance, indexes of physiological and biochemical of blood and carcass quality of bucks by feeding-slaughtering trial. It could provide scientific basis for the use of jujube in the future.Experiment 1:Effects of different levels of jujube in diet on growth performance of bucks and economic profits. Thirty JinLan bucks with the weight of 25±1.53kg were choosed and randomly divided into 5 groups, fed on diet with 0%,5%,10%,15% and 20% concentration of substandard jujube for a period of 40 days in feeding trial. The results showed that:(1) The average daily gain in the groups with supplementation of 10%,15% and 20% jujube was significantly higher than that in control group and the group with supplementation of 5% jujube (P<0.01). Feed intake and feed efficiency of bucks had a increasing tendency (P<0.1). More economic profits were gained in the group with supplementation of 15% jujube (P<0.05). (2) the group with supplementation of 10% and 15% jujube had more higher of CP apparent digestibility than those in the control (P<0.05). The apparent digestibility of ADF and NDF was extremely significant difference (P<0.01), the apparent digestibility in the group with supplementation of 15% jujube was highest in all groups. (3) Meat percentage in treatment groups was significantly higher than that in the control (P<0.05). Dressing percentage of bucks had a increasing tendency (P<0.1). (4) Rumen index of 15% supplementional group was significantly higher than that of the control (P<0.05).Experiment 2:Effects of different levels of jujube in diet on indexes of physiological and biochemical of blood of bucks. Blood sample was collected at the end of the feeding trail and analyzed subsquently. Results:(1) The group with supplementation of 15% jujube had higher of MCH and Hb than those in the control (P<0.05). The immune cells had no significant difference among groups (P> 0.05). (2) Activity of CAT in the group with supplementation of 15% and 20% jujube was extremely significantly higher than that in the control (P<0.01). Activity of SOD in the group with supplementation of 15% and 20% jujube was extremely significantly higher than that in the control and 5% group (P<0.01). (3)The content of IgG and IgM of the group with supplementation of 10% jujube was extremely significantly higher than those in the control (P< 0.05). The content of IgE in the group with supplementation of 20% jujube was extremely significantly higher than that in the control (P<0.01). (4)The content of LDL of the group with supplementation of 10% jujube was significantly higher than that in other groups.Experiment 3:Effects of different levesl of jujube in diet on carcass quality of bucks. The meat sample was collected at the end of the slaughtering experiment and analyzed. Results:(1) The shear force, cooked meat rate and pH of the chevon in groups with addition of jujube has significant difference compared with control group (P< 0.05). There was no significant difference (P> 0.05) in water holding capacit in each group. (2) The content of water and protein of chevon in the group with supplementation of 15% jujube was significantly higher than that in the control (P< 0.05). The content of fat of chevon was extremely significant difference (P< 0.01). (3) The content of Ca, Mg, K, Na, Mo, Mn, Fe and Zn of chevon were significant difference (P< 0.05). (4) The content of histine of chevon in the group with supplementation of 15% jujube was significantly higher than that in the control (P< 0.05). (5) There was no significant difference (P> 0.05) in fatty acid in each group. The above results show that supplenenttation 15% jujube in diet could improve the efficiency of feed and productive performance of bucks, and develop immunity from disease, and increase nutritional quality.
