| Cranberry(Vacinium macrocarpon)is a small,edible berry that is extremely resistant to cold and is suitable for growing in a weak acid environment.The 12 Cultivar of small orchard in Jilin Agricultural University pulp Cranberry as test materials,through single factor experiment,discusses the extraction of bioactive substances in cranberries,determine the content of different Cultivar in different periods of cranberry fruit phenolics,terpenes,organic acids and other bioactive substances;in order to provide theoretical data for the evaluation of different physiological activity of cranberry germplasm resources,and provide scientific basis for the further development of cranberry and industrialization.The main results are as follows:1 The cultivar ‘Bergmen’ as a sample,through single factor experiment and response surface analysis of the experimental results,the optimum conditions of total polyphenol in cranberries: ethanol concentration: 49%;extraction time: 14min;solid-liquid ratio: 1:15(W:V);extraction temperature: 51.5 degrees.Under these conditions,the content of total polyphenol was 447.29 ± 12.03 mg/100 g.2 Different Cultivar of cranberry anthocyanins and other bioactive substances and p H chemical composition show significant diversity;content of bioactive substances,the total polyphenol content of ‘Bain Favourite No.1’(1449.54 mg/100g)and proanthocyanidin content(4006 mg/100g)is the highest,the content of total flavonoids(‘Washington’ 644.34 mg/100g)and anthocyanin content(29.11 mg/100g)was the highest.The main components,"Bain Favourite No.1" good taste,excellent Cultivar suitable for fresh eating and processing.3 Cranberry contains a certain amount of rutin,chlorogenic acid,ferulic acid and caffeic acid.The content of rutin was higher in cranberry,the average was 143.43 mg/100 g,and the lowest content was ferulic acid,with an average value of 8.91 mg/100 g.Among the 12 tested Cultivar,the highest content of rutin was ‘Bain 11’,the highest content of chlorogenic acid was‘Mathewes’,the highest content of ferulic acid and caffeic acid was ‘Bergmen’.4 Cranberry fruit contains a certain amount of terpenoids,including ursolic acid and oleanolic acid.Among the 12 tested Cultivar,the average content of ursolic acid in fruit was higher than that of oleanolic acid in the content of 249.19 mg/100 g,and the content of terpenoids in ‘Washington’ was the highest,while that of ‘Bain 11’ had the lowest content of terpenoids in.The changes of terpene in different Cultivar of blueberry were different with theripening of fruits.5 6 Kinds of organic acids were detected in the experiment,including the oxalic acid,malic acid,malic acid,ascorbic acid,citric acid and maleic acid,and so on.The citric acid content is the highest,the average value was 5508.46 mg/100 g,the total acid content of 41.6%,followed by quinic acid,the average value was 5088.97 mg/100 g,and then the malic acid,the average content was 1998.51 mg/100 g,the other acid content is low.The organic acid content in cranberry from red stage to green stage period of organic acid the content is less,and the veraison was different. |
