In the history,Fujian Province is an important region of cane sugar,sugar industry in Fujian province has experienced a long development process.Sugar demand is an important factor to drive the production and sales,before the modem China,Fujian traditional sugar industry developed rapidly because of the great demand,along with the expansion of domestic and foreign markets,Fujian sucrose production and sales has been thriving.In the Ming Dynasty,there were four aspects can proved its development as follows:the expandment of the sugar production?the progress of the sugar technological process?the varieties of sugar production.the expandment of commerce.In the early and medium term of Qing Dynasty,Fujian's Sugar industry have a large progress in the Region?varieties and commerce and so on,showing a steady development momentum and by the time fight for land between sugar and rice.In the end of the Qing Dynasty,domestic and foreign market structure has both changed.Under the effect of unstable demand,these changes were reflected the transformation of Fujian cane sugar from domestic and foreign demand,which was mainly rely on domestic demand,Sugar input and war have weakened domestic demand,Fujian traditional sugar industry in the impact of foreign sugar showed a substantial fluctuations and shocks.Therefore,under the impact of demand changes in market,Fujian cane sugar's market was shrinking,and it bring a challenge to Fujian traditional sugar production and sales.Fujian's sugar industry could no longer had a stable development just like Ming and Qing period.In this background,the central and local governments in the late Qing Dynasty and Republic of China realized that there was a need to promote sugar industry,both of them took some measures to revitalize Fujian's sugar industry.In addition to the government,oversea Chinese businessmen and local businessmen also took a lot of measures to save their interests in Fujian's Sugar industry.In addition,peoples,especially intellectuals,in order to learn from the advanced sugar producing countries.However,they all get little effect and were unable to reverse the downward trend of sugar production in Fujian.In the meanwhile Fujian's sugar industry was seeking survival in turmoil.
