In recent years,study on food cold chain has been one of the current supply chain research hotspots,with people's increasing demand for cold chain food.However,food cold chain is vulnerable to many kinds of risks,enhancing the difficulty of risk management,due to production dispersion of fresh,eggs,milk and other cold chain food,structure complexity of food cold chain,uncertainty of supply-demand,and special technical requirements for food cold chain.Effective management of food cold chain can ensure food quality of food cold chain,reduce logistics cost,and cut the cost of supply chain.In order to improve the efficiency of food cold chain,studies mainly from the following aspects had been made.First of all,research status at home and abroad had been introduced.The characteristics of food cold chain and its risk and the basic theory of supply chain had been expounded.Then,food cold chain risk factors based on SCOR(Supply Chain Operations Reference)had been identified,with faced food cold chain risk divided into seven categories,such as planning,raw material procurement,manufacturing,transportation and distribution,goods rejected,organizational and external risk.The index system of food cold chain had been established,the weight of which are determined by fuzzy analytic hierarchy process,and the risk assessment model of food cold chain had been built by fuzzy comprehensive evaluation.Then,a code of the two methods is made by MATLAB language.At last,the feasibility of the risk assessment model of food cold chain had been verified by an empirical analysis of a certain aquatic products cold chain using the code automatically.
