The aim of this thesis is invent an enhanced nutritional porridge with lipid-lowering function which use Auricularia Auricula ultrafine powder,rice,beans,dry nuts and berry as its material.This research provide a new way for development of heilongjiang Auricularia Auricula industry and Auricularia Auricula products additional value increasing.The research include three part:1.Optimization of ingredient of Auricularia Auricula enhanced nutritional porridge1)Single factor experiment:Make sure the basic material of this study based on the ingredient of mixed porridge in the market.The effect of concentration of substrate,immersion time and steaming time on the quality of enhanced nutritional porridge.Results showed ultrafine powders of Auricularia Auricula 1g,dip made time of Auricularia Auricula was 1.5h,black rice 8g,glutinous rice 12g,dip made time of rice was 1.5h,main accessories best ratio 3:1,stabilizer 0.2g,ASK 0.1g,xyitol 0.2g and high pressure cooking time was 20min.2)Response Surface Methodology experimentAccording to the result of single factor experiment and PB 2 levels select experiment,we knew that amount of rice.immersion time and steaming time were the most importent factors to Auricularia Auricula enhanced nutritional porridge.Response Surface Methodology experiment about these three factors showed amount of rice was 19.84g,immersion time was 60.52min and steaming time was 15.38min.2.Cholesterol-lowering functional evaluation of Auricularia Auricula enhanced nutritional porridgeBuilt up 4 group of mice model such as control group,high fat content group,normal nutritional porridge group and Auricularia Auricula enhanced nutritional porridge.Collect biochemical criterion data like weight.serum and so on to determination level of total cholesterol?Triglyceride and high density lipoprotein.The model proved that Auricularia Auricula enhanced nutritional porridge reduced the amount of total cholesterol and triglyceride and increased the amount of high density lipoprotein.Triglyceride significantly and increase the amount of high density lipoprotein.3.Accelerated shelf-life experimentUse accelerated shelf-life testing to judge if the products metamorphic during less than normal time.After the test,shelf-life of Auricularia Auricula enhanced nutritional porridge was more than 18 months in the environment with 23?.
