Today,more and more people focused on food safety,including the traditional soybean products which get more and more market share.In the past,people gave attention to the taste of the dishes.Now,with the change of the consume habits and the improve of the consume ability,the attention changed to the effect of the dishes,and the traditional soybean products is just one of these home-cooked dishes.The development of traditional soybean processing industry has some economic and cultural value,most traditional soybean processing industry rooted in the urban fringe or rural not only providing people with delicious food,but also simulating the development of the local economy and culture.At present,Chinese traditional soybean production growing rapidly,product categories increasing,the consumer market has great potential.Cities traditional soybean processing industry market has become increasingly standardized,product quality steadily improved,but in some cities and urban fringe areas,market supervision arduous task in rural areas.Traditional soybean processing industry scale faster,accelerating the pace of automation,the traditional soy brand awareness has been strengthened,the local government has been conscious small-scale soybean workshop norms and guidance.At the same time,technology and equipment level of mechanization traditional soybean continuous improvement,but compared to the international advanced level is still a big gap.In recent years,with the support of government,industry management and achieved certain results,the role of national and local soybean industry associations began to appear,but limited role effectiveness.Throughout our traditional soybean processing industry,it can be said that with the achievements and challenges,opportunities and challenges.Nanjing as the capital city in Jiangsu province has many traditional soybean processing industry,people in Nanjing give more attention to the taste and the quality of soybean products.Along With the development of the city,Nanjing soybean processing industry is showing a thriving trend currently,providing people with daily soybean products and meeting their dietary needs.At the same time,some other achievements have made also,such as:number of traditional soybean processing enterprises gradually reduced,greatly improving the quality of soy;traditional soybean variety diversification,brand gradually increased;traditional soybean processing industry market potential;two-pronged government support and regulatory status.Although Nanjing soybean processing industry has made a series of achievements,there are also a lot of problems caused by the history and modern development,issues include that:a larger number of small workshop production still;processing non-standard,low-tech;processing equipment is simple,backward mode of production;product packaging backward and can not meet the requirements of modern logistics;brand awareness is weak;small policy support,less funding.Problems appeared in Nanjing traditional soybean processing industry should be solve urgently,so this paper made some suggestion:To step up publicity efforts to raise awareness of the importance of the development of traditional soybean processing industry.Strict adherence to industry standards,increased supervision.To develop advanced processing technology and equipment,training of high-tech talent.At the same time,improve packaging and cold chain logistics.Adapt to the times,take the brand strategy.Increase government policy support,Mainly from the tax policy support,brand support policy.Finally,pay attention to role soy industry associations,construction associations to improve the soybean industry.
