The food safety problems in college canteen generally reflected in three aspects:First,the safety of the raw materials;Second,the food safety in the process of food processing;Third,the safety of the dining environment.From the perspective of the overall situation of the food and beverage industry,biological pollution(foodborne disease),chemical pollution(including pesticides and veterinary drug residue,natural toxins),abuse of food additives is the main reasons for the threat to food safety.School canteens are at high risk of bacterial food poisoning incidents occurring on dining venues.In order to reduce and eliminate the possibility of food poisoning incidents,it is urgent to establish sound and effective school cafeteria food safety management system.Based on 89 colleges and universities,primary and secondary schools in Beijing,a sample survey is conducted about total number of bacteria in the dishes(including hot dishes and cold dishes)with the purpose of analyzing food safety hazard in the school canteens.A sample survey is conducted about pesticides in vegetables and veterinary drug with in raw meat with the purpose of analyzing food raw materials safety hazard in the school cafeterias.Another sample survey is conducted about pesticides the surface of tableware with the purpose of analyzing repast environment safety hazard in the school canteens.The detection results show that:1.Hot dishes of food safety than the cold dishes.2.The number of contaminating microorganisms in cold dishes is different,mainly because of its circulation and processing of the production process in contact with the environment is different.3.The pesticide residues and veterinary drug residues in most of the raw materials of the university canteen in Beijing are in good general condition.4.Tableware cleanliness of college canteen is generally good,because91.80% of all the collected samples of bacteria within acceptable range in all samples.5.In the starch,white fungus,dried lily and other samples in the detection of sulfur dioxide was found to exceed the standard serious,of which dried lily of the highest sulfur dioxide residue,far exceeding the relevant national standards limit(<100mg/kg)standards.Therefore,it is necessary for college cafeteria to carry out these raw materials from time to time detection,preventive measures,food safety supervision departments should strengthen the source of raw materials to monitor to ensure the safety of students eating.
