In order to differentiate fresh and thawed meat,using fresh and thawed pork as experiment material to establish a method based on HADH value,and extent the method to differentiate fresh and thawed prawn,xiagu as well as beef.The result showed that the optimal analysis method is :1.Analyze time 150 s,2.Leach liquor 22.5 ?L,and 3.Leach time 15 min,neglect temperature and weight when analyzed the sample due to these factors make little difference to HADH value;using this method,HADH value of sanceng,paigu,liji,qiantui pork have highly significant difference between fresh and thawed samples,fat and bones have no difference between fresh and thawed.Combined with significance analysis and discriminant analysis,the unknown sample will be fresh if the HADH value less than 186,and the unknown sample will be thawed if the HADH value more than 250,besides,it need prejudge when HADH value between 186 and 250.The HADH value of prawn have highly significant difference between fresh and thawed samples,and the unknown sample will be fresh if the HADH value less than 84,and the unknown sample will be thawed if the HADH value more than 85;fresh and thawed xiagu have highly significant difference in HADH value,and the unknown sample will be fresh if the HADH value less than 76,and the unknown sample will be thawed if the HADH value more than 225;there have highly significant difference of HADH value between fresh and thawed beef,if the HADH value more than 67,the unknown sample is thawed,and if the HADH value less than 56 the sample will be the opposite.These reliable and accurate results clearly illustrated the HADH threshold value of fresh and thawed meat.These results provided reference for the further study of fresh and thawed meat,and offer theoretical foundation for the intensive study.
