Hawthorn is a unique medicinal and fruitful tree species in China,and it is divided into mountains and rivers in the north and south.Fruits and leaves have both high nutritional value and health care functions.However,because of its sour taste,it is hard to be directly accepted by consumers,and less is used for medicine.Therefore,product development has always been a bottleneck problem that restricts the development of the industry.This thesis takes Guangxi Daguoshan Hawthorn(Nanshan Mountain)as the research object,breaks the traditional processing form of Daguoshan Hawthorn in Guangxi,and uses spray drying technology to develop Hawthorn fruit powder solid drink,which will help boost the production and consumption of Hawthorn,extend the industrial chain,and improve The added value of products also meets the demands of consumers in the new era for health products.This paper takes Guangxi as a raw material for the leaves and fruits of Hawthorn fruit.Firstly,ultrasonic extraction method was used to extract the flavonoids from dried hawthorn leaves.The single factor and response surface experiments were used to optimize the extraction process of flavonoids from hawthorn leaves to determine the best technology for extracting flavonoids from hawthorn leaves.Secondly,for the protection of large fruit hawthorn in the process of processing,the use of sulfur-free color protection agent to protect the hawthorn,to determine the best mix of color protection agent.Then,the experiment was used to pulp the flavonoid extract of hawthorn leaves and the fruit,and the malt dextrin,cyclodextrin,lecithin,and sugar powder supplements were sprayed on the hawthorn pulp to obtain the hawthorn fruit flour's powder yield,water content,Taste and odor,sticky wall condition,bulk density,fluidity,and color were the evaluation indexes,and the best formulation process for hawthorn fruit powder solid beverage was determined.Finally,the effect of spray drying equipment parameters on the quality of fruit powder was studied.The extraction rate,moisture content,flavor and odor,viscidity,bulk density,fluidity and color of hawthorn fruit powder were used as evaluation indicators to determine the best parameters for spray drying..The main research contents and results are as follows: 1.Determined the ultrasonic-assisted extraction of flavonoids from the leaves of the big fruit Hawthorn.The single factor and response surface experiments were used to determine the extraction process of flavonoids from hawthorn leaves by ultrasonic extraction.Extraction temperature was 59°C,ultrasonic power 140 W,extraction time 120 min,and the ratio of material to liquid was 1:56(g/mL).The highest rate is 54.18 mg/g.2.Determined the best compounding process for sulfur-free color protection of the big fruit hawthornThe color protection effects of five sulfur-free color-protecting agents such as ascorbic acid,calcium chloride,tea polyphenols,sodium chloride,and chitosan were compared to screen out three color-protecting agents: ascorbic acid,calcium chloride,and sodium chloride.Orthogonal experiments to determine the best combination of compound color protection agent concentration: 0.3% ascorbic acid + 0.2% calcium chloride + 0.5% sodium chloride,? E value: 7.83,the smallest browning change,the best effect.3.The best formulation process for hawthorn powder solid beverage ingredients was determinedThe spray drying parameters of fixed inlet air temperature of 180°C,feed rate of 40 mL/min,and atomizer(nozzle)rotation speed of 20000 r/min were passed through four parameters: maltodextrin,cyclodextrin,lecithin,and granulated sugar.Substances were used as excipients.Single factor and orthogonal experiments were used to optimize the excipients.Maltodextrin 12%,cyclodextrin 2%,and lecithin 0.8% were the best,and the extraction rate was 32.01%.The content is 4.07%,the bulk density is 0.32,and the wall is not sticky.4.Determine the optimum parameters of the spray dryer processThrough single factor and orthogonal experiments,the parameters of spray drying process were determined: inlet air temperature 160°C,material concentration 20%,atomizer(nozzle)rotation speed 21000r/min,feed rate 35r/min,and powder yield 35.98%,the moisture content is 4.08%.
