Fatty acids(FAs)of organic milk and UHT milk in China lacks systematic data and evaluation,especially lacks research on FAs fingerprint property.A total of 139 organic and non-organic raw milk and UHT milk were collected,and FAs profile,i.e.FAs finger print,were determined by gas chromatography(GC).FAs profile properties among organic and non-organic,brands,seasons and geographical origin were analyzed by PCA and descriptive statistics.FAs of raw and UHT milk shows no significant difference in fatty acid paired T test,however there were significant differences(P<0.05)between raw and UHT milk on few individual fatty acid,but absolute difference was not considerable.PCA score plot on FAs fingerprints indicates clear separation trend between raw and UHT milk,with few crossover-samples.Organic and non-organic raw and UHT milk showed clear separation trend on PCA score plots,C18:2n6c,C18:1n9c,C14:0,C16:0 and C18:0 were contributing major and marker role FAs on the separation.PUFA,?-6,?-3 and Unknown FAs(UN)in organic milk were significantly higher than those in non-organic milk(P<0.05).FAs profile of different brands UHT milk were different.PCA score plot showed YiLi organic milk samples cluster separated obviously with far distance from that of MengNiu and Sheng-Mu,and Meng-Niu and Sheng Mu samples from same geographical origin also indicated evident separation trend,and C18:2n6c,C18:1n9c,C14:0,C16:0 and C18:0 contribute much for the separation.About non-organic UHT milk,Yi-Li and Meng-Niu samples had clear separation tendency,and SFA,MUFA,TFA and UN can distinguish these two brands.Modern Farming,Guang-Ming and San-Yaun three brand,with fewer samples amount,no observed separation,and FAs property differences were not obvious.Among same different grade product showed separation,e.g.Yi-Li Satine organic milk,Zhen-Nong(labeled fortified with anhydrous butter),separated and polarized from Satine non-organic milk and an-other normal pure milk,but the latter two types pure milk were no separation.However,FAs among Meng-Niu different grade products were no significant difference,and PCA projection also could not separate them.FAs fingerprints of raw milk has seasonal differences,PUFA of milk in summer and autumn was higher than that of winter and spring,but there was no seasonal difference among UHT milk samples.Raw milk FAs profile of samples from different geographical origins were significantly different,but the interaction of season and forage/feeding wasn't analyzed in this study.It is feasible to discriminate organic and non-organic milk and different brands of UHT milk by FAs fingerprint profiling.
