The freezing technique can reduce the difficulty of pressing the juice of purple potato.This study aims to improve the efficiency of the juice of the purple potato and reduce the loss of the nutritional quality of the purple potato.Through the study of the influence of the freezing technology on the juice rate and quality of the purple potato,the freezing technology is determined through the grey correlation analysis.Based on these parameters,the formula,clarification and sterilization parameters of purple potato drink were determined.The results are as follows:(1)According to the grey correlation degree,the optimal freezing conditions were analyzed(the purple potato blocks were frozen for 1d,2d,3d,4d and 5d at-5?,-10?,-15?,-20?,and-25?)is-10? Frozen 3d;optimal thawing temperature(10?,15?,20?,25?,30?)is 30?;optimal freeze-thaw cycles(1,2,3,4 and 5 times)is1times.The effect of different freezing conditions on the yield and quality of purple potato juice was different.Through the comprehensive analysis of grey correlation,the optimum treatment results were as follows: freezing 3d at-10?,thawing at 30? and 1 times of freezing thawing,that is,the juice rate is 56.89%,the soluble solid is 6.45%,the content of anthocyanins,polyphenols and Vc is 353.39mg/L,1.64 Delta?OD/g,10.05mg/100 g.(2)With the sensory score as the index,the purple potato juice beverage was allocated.The optimum formula was 60% of purple potato juice,6% of fructose syrup,12% of xylitol and 1% of citric acid.(3)Taking the transmittance of purple potato beverage as the index,the clarification parameters were determined.The 1% chitosan solution was a suitable clarifier for purple potato beverage.The optimum formula was: the dosage of 1% chitosan solution was 0.25%,the clarification time was 3h,and the clarification temperature was 35.(4)By comparing the content of anthocyanin and microorganism as indexes,by comparing three kinds of sterilization methods,the best bactericidal parameters are: under the sterilization condition of 90 10 min,the content of anthocyanin is the highest,which is125.78mg/L.
