Chemical preservation and physical methods has been used as the fresh-keeping method of postharvest Cherry tomato,but long-term usage of chemicals will do harm to human health,while the pathogen will generate resistance to drugs.Due to high initial investment costs,cumbersome operation and affecting quality and the like,physical methods merely apply to the fresh-keeping of some fruits.At present,the natural plant extracts and edible coatings compound preservative has become a new research hotspot,and demonstrate that it will get a great prospects.Natural plant extracts and edible coatings compound preservative can reduce the chemical residues,reduce environmental pollution,good for food safety and so on in the process of cherry tomato's preservation.In this study,take water extracts of Schisandra chinensis,Ligustrum lucidum and alcohol extract of cinnamon and edible film former of pullulan polysaccharide,xanthan gum,guar gum and long bean gum as raw materials,by means of soaking method and analyzing the weight-loss ratio and rotting rate of cherry tomato to screen out the best fresh storage effect.On the basis of single factor experiment,the concentration of plant extract,the concentration of film former,the concentration of coating agent and the immersion time were selected as the independent variables.The response surface method was used to optimize the plant extract and film former,the effect of cherry tomato fresh-keeping under normal temperature(25 ?)was studied.The results are as follows:1.Took the "Wanzihong" cherry tomato as the trial target,and took weight-loss ratio and rotting rate as the evaluation index,the effect of water extracts of Schisandra chinensis,Ligustrum lucidum and alcohol extract of cinnamon and edible film former of pullulan polysaccharide,xanthan gum,guar gum and long bean gum on cherry tomato fresh-keeping under normal temperature(25?)was Screened.Made the cherry tomato without any treatment as blank control group 1(CK1)and with water treatment as the blank control group 2(CK2)and negative control,and chlorine dioxide preservation solution as the positive control.The results showed that the water extract of Schisandra chinensis was the best of the three kinds of plant extracts.And compared with CK1,CK2 and positive group,the rotting rate reduced by 26.68%,21.43% and 15.41% respectively;Weight-loss rate reduced by 4.10%,12.54% and 2.74% respectively.The effect of Guar gum on cherry tomato postharvest fresh-keeping is best in 4 kinds of film-former,compared with CK1 and CK2,positive group,rotting rate reduced by 29.40%,55.56% and 29.40% respectively;Weightlessness rate reduced by 29.66%,28.68% and 21.27% respectively.Through screening the concentration of the water extract of schisandrae chinensis,guar gum,glycerol,and soaking time,it is concluded that the optimal concentration of the schisandrae chinensis concentration is 0.10 g/mL,the optimal concentration of the guar gum concentration was 1.00%,the glycerol optimum volume concentration was 1.50%,the soaking time was 2.00 min,and on the basis of single factor,using the weighted comprehensive preservation index as the response value,using the response surface analysis to optimize schisandrae chinensis and guar gum composite coating antistaling agent.The best optimum combination of cherry tomato postharvest fresh-keeping : the water extract of schisandrae chinensis concentration is 0.10 g/mL,guar gum concentration was 0.95%,the glycerol volume concentration was 1.55%,the soaking time was 2.10 min,the optimum conditions the weighted comprehensive index was 14.42.2.The effect of schisandrae chinensis with guar gum compound coating antistaling agent under temperature(25?)on the "Wanzihong" cherry tomato postharvest storage in the process of nutritional quality indicators and the defensive enzyme activity indicators: the influence of the optimized composite coating antistaling agent best combination(the quality of the water extract of fructus schisandrae chinensis concentration is 0.10 g/mL,guar gum,mass concentration of 0.95%,help preparing glycerin volume concentration of 1.55%,soaking time was 2.10 min)is set to the optimal set of dealing with cherry tomatoes,without any processing as blank control group 1(CK1)and with water treatment for blank control group 2(CK2)as the negative control,liquid chlorine dioxide with positive control group.Results show that compared to CK1 and CK2,positive group,the decay rate of the optimal group was reduced by 80.94%,77.77% and 76.46%,respectively,the extremely significant difference(P<0.01);the weight-loss ratio was reduced by 28.84%,28.70% and 16.51%,respectively,the extremely significant difference(P<0.01);the respiration intensity was reduced by 5.20%(P>0.05)? 26.74%(P<0.01)?10.21%(P<0.05),respectively;the optimal set of effective to keep the fruit soluble solid content,soluble sugar content,soluble protein content,Vc content,organic acid content,compared with CK1 and CK2,positive group,reduce the loss of soluble solids content are 5.87%,8.70%,3.70%,respectively,and CK1 and CK2 have significant difference(P<0.05),and there is no significant difference between positive group(P>0.05);Reduce the loss of soluble sugar content are 51.28 %,52.14 %and 30.17 %,respectively,extremely significant difference(P<0.01);Reduce the loss of soluble protein content are 8.21 %,14.76%,16.61%,respectively,CK1 and CK2,and positive group had no significant difference(P>0.05);Vc loss decreased by 44.71%,40.32% and 0.27%,respectively,with CK1 and CK2 extremely significant difference(P<0.01),and the positive group difference was not significant(P>0.05);Organic acid content to reduce loss of 16.87%,12.27% and 8.90%,respectively,with significant difference(P<0.05),and therefore the optimal group can keep cherry tomato nutritional quality,compared with CK1 and CK2 The content of malondialdehyde(MDA)in fruit cells was decreased by 14.81% and 5.47%,respectively,best combination were significantly lower than CK1(P <0.05),the optimal group can better improve the fruit of peroxidase(POD)and superoxide disproportionation enzyme(SOD),catalase(CAT)and phenylalanine ammonia enzyme(PAL)is highly active,compared with CK1 and CK2,positive group,the activity of POD increased by 8.03%,4.59% and 6.29%,respectively,the significant difference(P<0.05);The SOD activity increased by 17.11%,13.16% and 13.82%,respectively,with CK1 and CK2,positive extremely significant difference(P<0.01);The CAT activity increased by 12.23%,15.71% and 19.26%,respectively,the activity was significantly higher than that of CK1 and CK2,the positive group(P<0.05);PAL activity increased by 16.55%,12.23% and 7.91%,respectively,the significant difference(P<0.05).By the known,the optimal group can effectively induce the protective enzyme activity,improve the disease resistance,effectively delay the postharvest decay disease,good preservation effect.Effectively prolong the cherry tomato postharvest storage period.
