Most of the sucrose ester products in China are compound type,with high impurity content and ash content,low sucrose monoester content,and poor quality.Mitsubishi has developed various series of Hydrophile-lipophile Balance?HLB?sucrose ester products from 1 to 16 to better meet market needs.First,product of purified sucrose fatty acid monoester and diester were isolated from Mitsubishi's sucrose fatty acid ester product.The pure sucrose fatty acid monoesters and diesters were obtained by silica gel column chromatography and monitored by HPLC-ELSD,TLC,nuclear magnetic and MS methods.The quantitative analysis of sucrose fatty acid monoesters was performed by HPLC-ELSD.Qualification and quantification of sucrose fatty acid monoesters provided an accurate analytical calculation method.Secondly,the separation and purification of domestic high-pass sucrose fatty acid esters were studied.Firstly,the saponification value of sucrose fatty acid ester was determined.The qualification and quantitation of sucrose were established by HPLC.Sucrose in domestic sucrose fatty acid ester was completely extracted by adding ice water to the sample,and then sucrose fatty acid was sampled in methanol to completely extract sucrose fatty acid monoester.Finally,the amounts of sucrose and sucrose fatty acid monoesters in domestic high-pass samples were determined by HPLC-ELSD.When the ratio of ice and water was 1/150?g/ml?,sucrose could be completely extracted.When 1 g sample was extracted with 3mL methanol,followed by repeating 6 times,sucrose fatty acid monoester was completely extracted.Then,the reaction of sucrose fatty acid esters with methanol in alkaline aqueous solution to prepare sucrose fatty acid monoesters was studied.The amounts of sucrose fatty acid monoester obtained from different alkaline aqueous solutions,alkaline aqueous solutions and reaction time were studied respectively.The optimal reaction conditions were as follows:alkaline aqueous solution was 10%NaHCO3 solution,alkaline solution accounting for 15%?mole fraction?of substrate material.The reaction time was 60 min and the reaction temperature was 60°C.Under such condition,reaction of the sucrose fatty acid monoester,produced by the reaction of sucrose fatty acid ester and methanol,accounted for 57.1%in alkaline aqueous solution.Finally,the properties of sucrose fatty acid esters were analyzed.The emulsifying properties,HLB values and foaming properties of a series of sucrose esters and sucrose esters obtained from Mitsubishi were measured and compared.The physical and chemical properties of the sucrose esters produced in this experiment were basically the same as those of Mitsubishi sucrose ester S970 samples.
