Objective:In order to extend the industrial chain and improve the comprehensive utilization value of Hericium erinaceus,using the Hericium powder and cooked Hericium extract as raw material,the study aimed to explore Hericium tablet product formulation and process,to develop products of buccal tablets and to determinate the content and quality,so as to provide a theoretical basis for the enterprise production.Methods:At first,we determined the addition of Hericium powder,mannitol,maltodextrin and pregelatinized starch in product 1 by single factor analysis,and the addition of water extract of Hericium,mannitol,maltodextrin and and maltitol in product 2.Then we optimized the formula of buccal leisure products 1 and 2 using the sensory evaluation,disintegration time limit,friability and the difference of weight as indexes through the response surface design.At last,we prepared the Hericium buccal snack foods by powder method and wet powder tablet.The water of the products was determined by moisture weight loss method,protein was studied using Kjeldahl nitrogen determination method,fat was studied by Soxhlet extraction,total sugar was determined by Fehling reagent method,polysaccharide was studied by phenol-sulfuric acid method sulfuric acid method,adenosine was determined by HPLC,then we evaluated the two kinds of product quality.Results:1.The best formula of Hericium buccal tablets product 1:Hericium cooked flour 8%,mannitol dosage 56%,maltodextrin addition 31%,pregelatinized starch 5%,magnesium stearate addition amount of 0.5%;the best formula of Hericium buccal tablets product 2:Hericium extract solid added 9%,mannitol dosage 45%,maltodextrin addition 30%,maltitol adding 16%,magnesium stearate adding amount of 0.5%.The best pressure of the tablet is 19 KN.2.The moisture,ash,protein,fat and total sugar content of Hericium lozenge product 1 was 8.05%,7.83%,24.7%,5.79%and 42.57%;those of product 2 were 8.24%,6.15%,24.1%,6.01%and 41.49%.The contents of polysaccharide in Product 1 and product 2 were 4.67%and 5.73%;The content of adenosine in product 1 and product 2 was 0.172mg/g and 0.096mg/g respectively.3.The friability of Hericium lozenge product 1 and product 2 was less than 1%,the disintegration time was less than 10 min,tablet weight difference wass less than 5%,in line with the Chinese Pharmacopoeia.Conclusions:Two kinds of products have been developed,Hericium erinaceus buccal tablet land 2,which can be used to provide the theoretical and technical support for the production of the product.
