| The traditional "bamboo salt" is to put the raw salt(solar sea salt)into the fresh bamboo tube,then baked repeatedly under 800~1300 ℃,The famous "Violet Bamboo Salt"(such as Insan Bamboo Salt in Korea,written as BS-old)is obtained by nine cycles of baking,also known as "Nine baked bamboo salt".The traditional manufacturing process of bamboo salt is time-consuming,labor-consuming,high resource consumption and difficult to standardize.In this paper,the medium-frequency smelting method is used to innovatively apply the technology of co-melting and co-crystallization of bamboo leaf flavonoids(BLF)and raw salt under high temperature.The manufacturing process of traditional bamboo salt has been upgraded and replaced here,and the quality of final products has been significantly improved.While achieving standardized production,the production cycle of novel product is shortened and energy consumption is reduced extremely.As a result,labor productivity has increased substantially.In order to provide theoretical basis and technical support for utilization of this novel bamboo salt(written as BS-new),the physical and chemical properties,sensory quality and biological efficacy of protecting liver of BS-new evaluated.The main research contents and results are as follows.(1)The manufacturing method and parameters optimization of BS-new.The technology of medium-frequency smelting method was creatively applied to bamboo salt manufacturing.The quality of BS-new is closely related to baking temperature,holding time,heating rate and raw material ratio.So the four main technological parameters are optimized here.On the basis of a large number of experiments,the following BS-new products with gray,pink,blue,violet color were obtained and recorded as gBS-new,pBS-new,bBS-new,vBS-new separately.Their pH value and electrical conductivity were analyzed and compared.Further,the highest quality vBS-new was selected for subsequent experimental study.(2)The physical and chemical properties of vBS-new,vBS-old and raw salt were compared and analyzed Systematically.Using by pH meter,conductometer,transmission electron microscopy,enzyme marker,electronic tongue,electronic nose and other instruments and equipment,their differences of pH value,conductivity,sodium chloride content,crystal lattice morphology,free radical scavenging capacity and sensory properties were analyzed.The results show that the pH value of vBS-new solution with the same concentration is higher than that of vBS-old,which indicates that the content of alkali metal elements is higher;the content of sodium chloride in vBS-new(84.47%)is lower than that in vBS-old(88.69%)and in raw salt(93.36%),which indicates vBS-new has more abundant element composition;the size of vBS-new lattice was similar to that of vBS-old,both much larger than raw salt;and the lattice structure of vBS-new has changed greatly,which is more irregular than that of vBS-old.The evaluation results of antioxidant properties of different salts showed that vBS-new had higher scavenging capacity on free radicals than vBS-old,while the raw salt had almost none.The results of sensory evaluation showed that the scores of taste,odor and color of vBS-new were higher than vBS-old and raw salt.(3)A comparative study on the protection of BS-new and BS-old against acute chemical liver injury in C57BL/6 mice.Two normal control groups(without modeling)were fed with conventional diet(containing 2.0%salt)and salt-free diet + 4.0%NaCl aqueous solution(containing NaCl of the same quality as conventional diet).Four experimental group was fed a special salt-free diet,which consisted of raw salt control(4.0%salt),drug control(0.75%biphenyl diester + 4.0%NaCl),vBS-old control(4.0%vBS-old)and BS-new test group(4.0%vBS-new).Five mice in each group,oral gavage samples once a day for 21 d.After 21d,acute chemical liver injury model was induced by intragastric administration of CCl4 solution in four experimental groups.The levels of serum aminotransferase,protein and bilirubin were measured 16 h after modeling.Indicators of liver injury were examined,and the pathological sections of liver tissue were observed.The results showed that vBS-new could significantly reduce the levels of serum transaminase ALT(p<0.01)and AST(p<0.01).Biphenylenediester group could only significantly reduce ALT(p<0.01),but had no effect on AST.The data of serum bilirubin showed that vBS-new could significantly reduce total bilirubin,direct bilirubin and indirect bilirubin(p<0.01).At the same time,vBS-new can also significantly increase the GSH content and reduce the MDA content of the damaged liver(p<0.05),as well as enhance the activity of T-SOD(p<0.05).In addition,microscopic observation of liver pathological sections showed that the liver of vBS-new group was the closest to the normal control,with the better performance on the hepatic detoxification function than vBS-old.In summary,compared with traditional bamboo salt,the novel bamboo salt obtained by medium-frequency smelting technology has many advantages in physical and chemical properties,biological efficacy,mechanized production level,direct production cost,product standardization and so on.Therefore,it has broad industrial application prospects. |
