Oat(Avena sativa L.)is not only rich in protein,a variety of unsaturated fatty acids,essential amino acids,trace elements and various kinds of mineral elements,and rich soluble dietary fiber content,is also the best full nutritious food in grain.Their innovative research and development about Oat has become one of the most important research projects as a new type of food grains in our country industrialization development.At present,Oat milk beverage is promising oat products on the market,but most of them taste thick,andmarket development is market by certain restrictions.This study oats as raw material,adopting biological enzymolysis technology,establish a PET cold filling digestion oat milk beverage processing technology.Medium temperature alpha amylase enzyme solution conditions of oat starch were analyzed and optimized through the single factor experiment and response surface design.The optimum hydrolysis conditions of oat is that: Solid-liquid ratio(1:6.25),enzyme adding amount(9.81 U/g),pH(6.0),enzymolysis time(3 h),enzymolysis temperature(55 ?).Under this condition,oat enzymolysis measured DE value of 38.53 %,close to multiple regression equation model prediction.Different adding amount and different stabilizers were used to stabilize oats beverage.The stability results from high to low in the order: xanthan gum > CMC > carrageenan > MCC.Adding 0.12 % xanthan gum can make system stable.CMC can make the system stable when adding amount of 0.16 %,but Carrageenan in relatively high concentration of easily when flocculation of oats beverage.Response surface analysis of the optimal conditions of stability oat milk beverage,pH 7.5,gum addition amount of 0.14%,0.08% Xanthan gum,0.04% CMC,0.02% Carrageenan),homogeneous pressure for 30 Mpa,UHT 137 ?/ 30 s,25 ?filling.PET aseptic cold filling digestion oats beverage processing technological process: oatmeal add 6.25 times of water to a boil,pasting,cooled to 55 ?,add 9.81 U/g of alpha amylase,enzyme solution 3h,rose to 95 ?and Maintain 1 min to Cost of enzyme activity,colloid mill and 100 mesh filter,take digestion oat dilution 1 times to join with stabilizers and the related ingredient,UHT 137 ?/ 30 s,25 ?cold filling.A 92.52 metric tons per day of oat milk beverage PET aseptic cold filling production line was designed.The selection of related equipment and the factory plane design were completed.Both the factory total investment and payback period were analyzed to provide guidance for practical production.
