Ellagic acid,a polyphenolic material,was combined with polyvinylpyrrolidone(PVP)and polyethylene glycol(PEG)in different ratios to prepare a solid dispersion.The solubility of the solid dispersion is determined to select the appropriate type of solid dispersion.The properties and the solubilization mechanism of the solid dispersion were investigated by using UV,SEM,X-ray,etc.,Antioxidant capacity were detected to determine the addition amount of solid dispersion in preservation of the hairtail(Trichiurus haumela).construct a hydroxyl radical oxidation system to oxidize the hairtail,add ellagic acid,PVP,physical mixture,solid dispersion separately,and exploring the inhibitory effect of solid dispersion on the oxidation of lipid and protein in hairtail.On the basis of the above experiments,the effect of solid dispersion contrast with blank on lipid oxidation,protein oxidation and quality deterioration were detected during the actual storage of the hairtail.The main conclusions are as follows:1.Solid dispersion technology enhances the solubility of ellagic acid,The solid dispersion of ellagic acid and PVP in a ratio of 1:3 has a solubility of ellagic acid in0.528 mg/mL,which is a better choice.The zeta potential indicated that the stability of the solid dispersion was enhanced.The results of UV and X-ray indicated that no new substances were formed during the preparation of the solid dispersion,and the oxidation of ellagic acid is preserved.The results of SEM,DSC and X-ray indicated that the crystallinity of ellagic acid decreased in the solid dispersion,which was the main reason for the improvement of the solubility.Antioxidant ability test indicated that the solid dispersion has stronger antioxidant ability than ellagic acid,PVP and physical mixture.2.In the hydroxyl radical oxidation system,ellagic acid has stronger effect of inhibiting the lipid and protein oxidation of hairtail compared with the blank control.The solid dispersion has more obvious inhibition of oxidation than the ellagic acid and physical mixture in which the peroxide value and TBARS value of the solid dispersion for 5 h treatment group were lower than that of the pure ellagic acidtreatment group for 4 h,and carbonyl and thiol group of the solid dispersion for 5 h treatment group were equivalent to that of the pure ellagic acid treatment group for 3h,indicating that the solid dispersion technology enhances the inhibition oxidation of lipid and protein in the hydroxyl radical oxidation system.3.During the storage of the hairtail,the TBARS value,peroxide value,carbonyl and dimeric tyrosine in the solid dispersion treatment group increased more gradually,the protein solubility,thiol group and water holding capacity in the solid dispersion treatment group decreased more gradually,there was no significant difference in pH change between the control group and the experimental group,while the results of SDS-protein electrophoresis patterns,sensory evaluations,and textures show great differences,the results of TVB-N indicated that the solid dispersion treatment extended the shelf life of the fish at 4 ? to 5~6 days,indicated that the solid dispersion has potential application value in the actual storage process of hairtail.
