Ginger has a variety of varieties and is widely cultivated in many provinces of China.It is rich in nutrients and has good economic benefits.At present,there are few standard methods for ginger in China,and there are few detection methods.The research on quality and safety standards of ginger at home and abroad is beneficial to the quality and safety control of ginger.Establishing the detection method of nutritional indicators in ginger is of great significance for evaluating the quality of ginger,and studying the ginger of different places in China.Quality differences play a positive role in promoting industrial development.Compare the quality and safety standards of ginger at home and abroad,and analyze the similarities and differences between China and CAC,the European Union,the United States,Japan,Australia and New Zealand and the national pharmacopoeia on the standard quantity and limit value.In terms of safety,the domestic and international standards involve a maximum of 391 ginger pesticide residues.Currently,the Chinese standards are very limited in quantity and strict in the limit value.However,10 standards are more lenient than the international standards.Set a limit for the reference to international standards.For other pollutants,the number of countries/regions is small,mainly involving heavy metals,biotoxins and residual pollutants generated after the use of fumigants.It is recommended to conduct in-depth research and study and develop relevant standards.In terms of quality/quality,there are a limited number of domestic and foreign standards,and there are few indicators that can reflect the characteristic components of ginger.It is recommended to set a limit standard for ginger characteristic quality indicators and improve the quality standard system.Establishment of Ultra Performance Liquid Chromatography-Tandem Mass Spectrometry for Detection of Six Kinds of Gingerol in Ginger(6-Gingerol,8-Gingerol,10-Gingerol,6-Scheelenol,8-Scheelenol,10-Ginger)Analytical method for compounds of phenols and four kinds of curcuminoids(tetrahydrocurcumin,curcumin,demethoxycurcumin,bisdemethoxycurcumin).Separated by ZORBAX RRHD Eclipse Plus C18 column(2.1 x 100 mm,1.8 ?m),eluted with a gradient of 0.1%(v/v)formic acid in water and 0.1%(v/v)formic acid in methanol,using an electrospray ionization source,The positive ion multiple reaction monitoring mode is used to characterize and quantify the target.The method has good linearity,the limit of quantification is 0.10~7.71 ?g/L,and the average spike recovery of sample matrix at 3 levels is 82.8%~115.3%,and the relative standard deviation is 0.58%~11.49%.The 10 target factors in the actual samples were detected and the content span was large.The difference of characteristic nutrient quality factors in ginger from different producing areas showed that ginger was the most special in Guangdong Province,among which Fengjiang,Shajiang and Shanjiang had very high levels of 6-gingerol,curcumin and bis-demethoxycurcumin.It is significantly different from other gingers and can be used as a distinguishing index.The contents of 10-gingerol and 10-gingenol in bamboo root ginger in Sichuan Province are significantly lower than those in Henan,Hebei and Shandong provinces;6-gingenol in Shaodian ginger of Henan Province The content is generally higher than other ginger,and the contents of Shaodian ginger 6-gingerol,10-gingerol,8-gingerol and tetrahydrocurcumin are higher than that of Huaijiang and Zhangliangjiang;Shandong ginger is in 6-ginger The contents of phenol,10-gingerol,8-gingerol,tetrahydrocurcumin and curcumin were lower than those in Hebei Province.The horizontal comparison of 10 target factors showed that the content distribution of 6-gingerol and tetrahydrocurcumin showed good stability and symmetry,which were the highest content of gingerol and curcumin,respectively.As a main indicator for evaluating the quality of ginger.Further investigation revealed that the difference in ginger quality was related to the type of soil in which ginger was grown.
