With the improvement of people’s living standards,people’s life concept has changed,and more and more natural products,especially natural plant essential oils,are increasingly favored.Natural floral essential oil has high application value and is widely used in the fields of health care,food industry,eco-tourism,fruit and vegetable preservation and daily chemical products.However,due to the difference in raw materials,production areas and processing techniques,the quality of essential oils is uneven.The main research object of this paper is natural jasmine and chrysanthemum essential oil.Although there are many studies on the composition of natural chrysanthemum and jasmine essential oil,little research has been done on the synergy between aroma substances in essential oils.Therefore,this thesis firstly studied the main aroma compounds of three natural chrysanthemums and three kinds of jasmine essential oils by GC-MS combined with GC-O,and screened 44 and 48 characteristic aroma components for quantitative analysis.Among the chrysanthemum essential oils,the importance of terpenes to the aroma of chrysanthemum essential oil was determined by analyzing the content and aroma of the compounds;in the essential oil of jasmine,the importance of the esters to the aroma of jasmine essential oil was determined.Using the omission and addition experiments to explore the effect of the characteristic aroma components in chrysanthemum essential oil on terpene base,it was found that dl-limonene,terpinolene,γ-formene,β-myrcene,α-phellandene,D-decyl alcohol,α-bisabolol,furfural,(Z)-citral,camphor,eugenol,geranyl acetate,ethyl cinnamate,para-cymene,citric acid and isoborneol The aroma components have a significant effect on the aroma of chrysanthemum terpene.Using the omission and addition experiment to explore the effect of the characteristic aroma components in jasmine essential oil on the ester fragrant group,it was found that hexyl acetate,benzyl acetate,benzyl benzoate,methyl benzoate,benzoic acid ester,acetate ester,Lactic acetate,methyl jasmonate,methyl salicylate,linalool,benzyl alcohol,nerolidol,linalool,geraniol,eugenol,jasmone,α-pinene and anthraquinone A total of 18 aroma components have a significant effect on the aroma of jasmine esters.The S-curve method and the σ-τmethod were used to analyze the sensory interaction between the aroma componentsand the fragrant base which have significant effects on jasmine and chrysanthemum essential oils.The results show that the two analytical methods can be mutually verified.The sensory quantitative descriptive analysis method was used to study the five characteristics of chrysanthemum essential oil,including fruit,floral,woody,green and medicinal.D-sterol and α-red myrrh were studied by one-way analysis of variance.Correlation between alcohol,furfural,citral,camphor,eugenol,geranyl acetate,ethyl cinnamate,p-cymene,citric acid and isoborneol with five fragrant structures,further combined with σ-τ method was used to explore the sensory interaction between the characteristic aroma substances and the fragrant structure at different concentrations.The sensory quantitative descriptive analysis method was used to study the six characteristics of jasmine essential oils,including fruity,floral,woody,green and sweet.Fragrance and medicinal aroma,by univariate analysis of variance,linalool,benzyl alcohol,nerolidol,oxidized linalool,geraniol,α-pinene,eugenol,jasmonone and anthracene 6 The correlation between the fragrant rhyme structures was further combined with the σ-τ method to explore the sensory interaction between the characteristic aroma substances and the fragrant structure at different concentrations.
