Objective: To investigate the status of 5 heavy metal elements(cadmium,lead,chromium,mercury and arsenic)in commercial food in Fuxin in recent years,and to assess the daily exposure of residents of these types of foods.Methods: Food samples were collected in five districts and two countries.Atomic absorption spectrometry,atomic fluorescence spectrometry and inductively coupled plasma mass spectrometry(ICP-MS)were used for the determination of the food by national standard method.According to "Food Safety National Standard Food Pollutants Limit" GB 2762-2017,"Food Safety National Standard Canned Food" GB 7098-2015,"Food Safety National Standard Egg and Egg Products" GB 2749-2015,"Pollution-free Food Spices" NY 5323-2006 and other,the test results were determined.Since there is no existing national standard for spices,the decision is made with reference to the obsolete standard of "Pollution-free Food Spices" NY 5323-2006.EXCEL 2010 was used to collect data on five metal elements in the samples of food,and SPSS 20.0 was used for statistical analysis.The content,the detection rate and the over-standard rate of different metal pollutants in different monitoring samples was calculated,and the results with national standard limits were statistically tested to determine whether the results were statistically significant.Results: 1.There were no excessive samples of metal cadmium,lead,chromium,mercury and arsenic in the monitored foods.The detection rate of cadmium is 52.9%,the over-standard rate is 0.The detection rate of lead is 51.4%,the over-standard rate is 0.The detection rate of chromium is 80.1%,the over-standard rate is 0.The detection rate of mercury is 40.9%,the over-standard rate is 0.And the detection rate of arsenic is32.8%,the over-standard rate is 0.2.Among the foods monitored,elemental cadmium is common in canned foods,spices.Lead is commonly found in aquatic animals.Metal arsenic is commonly detected in canned products.Mercury is commonly found in spices,and egg products.Chromium is generally detected in egg products,aquatic animals,and spices.Conclusion: The monitored foods in Fuxin contaminated by heavy metals(cadmium,lead,chromium,mercury and arsenic)are within a safe range,and the daily diet does not pose health risks to human health.
