Apple is a typical kind of kernels and fruits.The planting area and yield of apples in China rank first in the world,and they are the dominant and characteristic resources in Shaanxi Province.Rich in dietary fiber,minerals,vitamins and polyphenols and other functional ingredients,easy to digest and absorb by the human body,loved by people from all walks of life.In addition to meeting the market demand for fresh food,most apples in China are used for processing concentrated apple juice.Concentrated apple juice processing is the main way to solve the surplus of fresh apples.It can not only improve the utilization rate of apples,but also greatly improve the economic benefits of apple industry and increase the income of fruit farmers.Concentrated apple juice,which is easy to store and transport,has become one of the main agricultural products participating in international trade and an advantageous industry for earning foreign exchange through export.In recent years,the color value of concentrated apple juice has been used as a characteristic index to evaluate the stability of products.Its color value has a great impact on the sales price of concentrated apple juice.High color value basically corresponds to high price.In the process of product sales,enterprises often suffer huge losses because of complaints about low color value of products.Therefore,reasonable control and evaluation of product color changes have a great impact on the sales price and sales volume of concentrated apple juice.Based on large data analysis,a color value evaluation system for concentrated apple juice was established.The color value evaluation system included three parts: the analysis and evaluation of the color value change of products in low temperature storage environment at 0-4 C,the evaluation of the color value change of land transportation link and the evaluation of the color value change of sea transportation link in the process of product sales.The research contents and results are as follows:(1)Under different temperature environments,the color value of the same batch of products had the same trend of change.The higher the temperature,the greater the color value decline rate.45? was selected for the product color value destruction test temperature from comprehensive evaluation.Products were designated as low risk,medium risk and high risk products by measuring the products in the three days of daily average color value in 45?.The risk level division standard was: 45 ? high temperature color value test average color value decline range 4.0 %~7.0 % for low risk;45 ? high temperature color value test average color value decline range 7.0 %~10.0 %(with equal to)as medium risk;45 ? high temperature color value test average color value decline range 10.0%~14.0% for high risk.(2)The color value stability of concentrated apple juice products was inversely proportional to the stored environmental temperature.The higher the ambient temperature was,the worse the color value stability of the product was;the lower the ambient temperature,the better the color value stability of the product.Considering the stability of the products and product storage efficiency,select 0 to 4 ? cold storage as concentrated juice daily storage environment.Of 0 to 4 ? cold storage products every month in the color value of retest,it is concluded that the range of monthly color value decrease was as follows: the monthly color value of low risk products decreased from 0.5 % to 1.5 %;the monthly color value of medium risk products decreased from 1.5 % to 2.5 %;the monthly color value of high risk products decreased from 2.5 % to 3.5 %.The establishment of assessment system of 0 to 4 ? environment change product color value estimate.Predicted color value(N)= off-line color value-monthly color value decline ×N(storage month after product off-line)(3)The reference range of the average daily decrease value of the color value of concentrated apple juice products in the land transportation link was: low risk 0.6 %~2.0 %;Medium risk 1.6 %~3.0 % and higher risk 2.8 %~4.3 %.The prediction formulas were obtained:land transport color value decreasing value = average daily value decreasing value of land transport color value × land transport time(days)(4)Generally,products will go through temperature upheaval,temperature mitigation period and temperature stability period in the shipping link.The measured data showed that: the temperature upheaval period had a great impact on the color value change of products due to the huge fluctuation of temperature in a short time.Temperature stability period product temperature was basically unchanged,color value was relatively stable,small changes.(5)The color value(arrival delivered goods)= color value(off-line)-decreased color value(under 0~4 ? storage)-decreased color value(land transportation)-decreased color value(shipping period).The establishment of assessment system of product color value change provides technical support for product sales and distribution.Through the evaluation results of the product color value evaluation system,we can macro control of product sales,high-risk batch products will be put on sale preferred,or according to customer requirements of different,targeted for distribution,effectively avoid products impression only complaint,on the premise of meet the requirements of the customer contract,maximize the interests of the products.
