In this study,Xinjiang medicine mulberry(Morus nigra L.),black mulberry(M alba L.var.tatartirca)and white mulberry(Morus alba L.)were used as research materials.The extraction and antioxidant activity of three varieties of mulberry polypHenol compounds.The main findings are as follows:1.The moisture content,ash content,pH value,titratable acid,soluble solids,crude fat content and crude protein content of the three mulberries were measured.The results showed that the water content,pH value,soluble solids and crude fat of medicinal mulberry The content and crude protein content were higher than those of black mulberry and white mulberry,the highest content of titrant acid of medicinal mulberry,and the highest ash content of black mulberry indicated that the composition and content of mulberry compounds in different varieties were quite different.2.The contents of fructose,glucose and total sugar are white mulberry> black mulberry> medicinal mulberry,and the difference between the varieties is significant.The organic acid content of medicinal mulberry has the most types of organic acids,9 types,black mulberry,8 types,and white mulberry.The total organic acid content of medicinal mulberry has the most,2.59 mg/g,followed by white mulberry 2.02mg/g,black The lowest for mulberry is 1.84 mg/g.The three types of mulberries have the highest tartaric acid content and the highest content of medicinal mulberry tartaric acid,which is significantly higher than that of black mulberry and white mulberry.3.The total phenol content of medicinal mulberry is significantly higher than that of black mulberry and white mulberry,and the total flavonoid content of black mulberry is significantly higher than that of medicinal mulberry and white mulberry.HPLC analysis of free polyphenols found that there are 13 kinds of free phenols in medicine mulberry and black mulberry.Among them,neochlorogenic acid was only detected in medicine mulberry,ferulic acid was only detected in black mulberry,white mulberry Only 8free polyphenols were detected.The cyanidin glucoside and cyanidin rutose glycosides are the highest in medicinal mulberry and black mulberry,but not detected in white mulberry,and white mulberry has thehighest content of catechins.The DPPH free radical scavenging ability,ABTS antioxidant activity,ORAC antioxidant activity and FRAP antioxidant activity of the three mulberries were all represented as medicine mulberry> black mulberry> white mulberry,and the differences among varieties were significant.4.UPLC-Q-TOF-MS analysis was performed on the extract of mulberry.It was found that 39 chemical components were detected in the extract.Among them,13 of the three mulberries contained 13 components,namely protocatechuic acid,Aescin,catechin,p-hydroxybenzoic acid,caffeoylquinic acid glucoside,chlorogenic acid,caffeic acid hexoside,cyanidin 3-rutinoside,caffeic acid,coumaric quinic acid,p-Coumaric acid,quercetin,kaempferol;vanillic acid hexose glycoside,mallow pigment,morning glory pigment,delphinium pigment,cyanidin only detected in medicinal mulberry,ferulic acid,kaempferol glycoside It was only detected in black mulberry,and buckwheat alkaloid was only detected in white mulberry.5.Analysis of three mulberry aroma components,a total of 18 alcohols,21 esters,21 aldehyd es,ketones and olefins,5 acids,25 others,alcohols and esters are the main aromas The compositi on accounts for 89.17%~98.53% of the volatile components.2-methyltridecane,3-methyltetradecane,2,6,10-trimethyldodecane,apigenane,2,6,10-trimethyltridecane,7-methyl Pentadecane,5-methylpenta decane,1-pentyl-2-propylcyclopentane,eugenol,and phytan were only detected in mulberry,1-vinyl-2-methylenecyclopropane,2,5-diethoxytetrahydropyran and 2,6,11-trimethyldodecane were only dete cted in black mulberry,and 5-methylundecane was only detected in white mulberry.In general,the content of aroma components in medicinal mulberry is the highest,at 1906.92 ng/g,and that of black mulberry and white mulberry is lower,at 489.82 ng/g and 682.05 ng/g.
