As a characteristic advantage resource in Guizhou,Rosa roxburghii has a broad prospect in the development of food,health products and drugs.At present,as consumers gradually pursue food consumption to be low sugar,low calories,health care function,convenient to eat and easy to carry,so it is of great significance to develop a functional buccal product with Rosa roxburghii Tratt.The traditional spray drying process of Rosa roxburghii juice powder is easy to absorb moisture,unfavorable storage and other shortcomings can not meet the needs of commercialization and industrial development,and the guidance for the development of Rosa roxburghii buccal tablets based on fruit powder is not strong.In this experiment,the spray drying technology of Rosa roxburghii juice was optimized,and the processing technology of Rosa roxburghii buccal tablets was studied by using the optimized Rosa roxburghii powder as raw materials.the research results will provide scientific and practical technical guidance for the existing processing technology of Rosa roxburghii powder and the quality improvement of related products.The main research and results are as follows:1.By comparing the effects of low DE maltodextrin,high DE maltodextrin and?-cyclodextrin on powder collection rate,VC content,flavonoid content and fuzzy mathematics sensory value of Rosa roxburghii juice spray drying,and through the comprehensive evaluation of fruit powder quality by TOPSIS method,it was concluded that when 60%?-cyclodextrin was added,the comprehensive score of Rosa roxburghii Tratt was the highest,which was 87.1 points.Therefore,60%?-cyclodextrin was selected as spray drying aid.The optimum parameter range was selected by single factor experiment,and the response surface experiment was carried out on the four parameter conditions of spray drying by using Box-Behnken central combination method.The optimum technological conditions of spray drying of Rosa roxburghii juice were determined as follows:inlet air temperature 179?,feed concentration 5.9%,feed flow 0.3/L,inlet air flow 30m3/h.Under these conditions,the powder collection rate of spray drying of Rosa roxburghii Tratt was 30.45%,the content of core VC was 753.96mg/100g.The content of flavonoids was 277.70mg/100g,and the sensory value was 85.95.The model correlation coefficients R2?Y1?=0.9747,R2?Y2?=0.9890,R2?Y3?=0.9953,R2?Y4?=0.9828.The actual values of each dependent variable reach 98.23%,98.84%,98.84%,98.47%,98.80%of the theoretical predicted value,respectively,and the experimental values are in good agreement with the theoretical predicted values,indicating that the model can be used to predict spray drying of Rosa roxburghii juice.The method is accurate and reliable,and the microbiological index of the final product meets the requirements of the national standard.The quality is stable.2.Spray drying powder of Rosa roxburghii Tratt was prepared by adding 1.5%microcrystalline cellulose,silicon dioxide and tricalcium phosphate with solid content of Rosa roxburghii juice,respectively.The physicochemical indexes were compared with blank group and enterprise Rosa roxburghii powder control group,and a comprehensive evaluation model of physicochemical quality was established by PCA.It was intuitively seen that the microcrystalline cellulose group had the highest score of 1.99.Followed by blank group,silicon dioxide group,tricalcium phosphate group,control group.Through cluster analysis,when the Euclidean distance was equal to 5,the blank group,silicon dioxide group and tricalcium phosphate group were grouped into one group,indicating that the physicochemical comprehensive quality of the three kinds of Rosa roxburghii powder was similar.When the Euclidean distance increased to 25,the microcrystalline cellulose group was clustered into the same group with other groups of samples,indicating that the microcrystalline cellulose group had low similarity with other sample groups,and the overall physicochemical comprehensive quality was different.It can be seen that principal component analysis and cluster analysis can better reflect the differences of Rosa roxburghii powder samples,and microcrystalline cellulose can best improve the comprehensive physicochemical properties of Rosa roxburghii Tratt spray-dried powder.3.On the basis of the above research,by selecting different fillers,adhesives,wetting agents and lubricants,the process and product formula of soft material for Rosa roxburghii buccal tablets were optimized by orthogonal test and D-Optimal method,and the quality of the products was evaluated.The results showed that the best filler combination of buccal tablets was microcrystalline cellulose+dextrin+xylitol,the best binder combination was sodium carboxymethyl cellulose+ethanol,and the best lubricant was magnesium stearate.Then the spray drying powder of Rosa roxburghii Tratt was mixed to optimize the process and formula of soft material,and the optimal process conditions were obtained as follows:ethanol 50%,drying temperature 60?,drying time 2h.D-Optimal results show that the optimal formula combination of buccal tablets is as follows:Rosa roxburghii powder 25%,microcrystalline cellulose 7.388%,dextrin 12.728%,xylitol 51.531%,sodium carboxymethyl cellulose 1%,citric acid 2.352%.The buccal tablets prepared by this formula are yellowish brown,smooth surface,uniform color,with the smell of Rosa roxburghii,sweet and sour taste,delicate entrance,moderate hardness,and the quality inspection of buccal tablets meets the requirements of the 2015 edition of Chinese Pharmacopoeia.The contents of VC and flavonoids are 159.52±4.30mg/100g and30.63±0.39mg/100g respectively,and the critical relative humidity is about 70%.The comprehensive quality is better than that of the same kind of products sold in the market.
