Food is the material basis for human survival and development.As a special consumption area of the catering industry,colleges and universities are more and more concerned by the society.Due to the problems of imperfect infrastructure,high price,long waiting time for meals in the school canteens,at the same time,with the features of centralized dining time and large number of diners,it has become one of the important challenges for college management to effectively relieve the pressure of students'dining.However,the vendors around colleges and universities take“delicious,cheap,convenient and quick”as their business principle,which is more and more popular among students,making the food safety problem in colleges and universities become extremely complex.Therefore,having a further study about the influencing factors about campus food safety and putting forward countermeasures to solve the problems are not only in line with the needs of university reform,but also closely related to the life and health of college students,which has important practical significance and research value.This paper adopts literature search method to collect relevant literature materials,in order to fully understand the current situation of food safety at home and abroad,summarize the factors affecting the university campus food safety,and conclude the effective solutions.At the same time,it uses the method of questionnaire to do the questionnaire survey and field survey,collects relevant information for statistics and summary,gets the actual survey results.At last,it makes use of the professional data analysis software to do statistical analysis of the obtained data,establishes the relevant digital model,conducts further research and analyzes the causes of the problems,puts forward more effective countermeasures to improve the prevention and control ability of the university campus food safety.1.The food safety problems of college students are analyzed.College students have a deep understanding about the hazards of contaminated food,food additives,genetically modified food,the scores are above 52.3 points.But they do not have enough awareness of food poisoning,identification index of food hygiene quality,pollution-free agricultural products,green food,identification of organic food,prevention of food poisoning,QS sign and other issues,the scores are lower than 50 points.In the common way of dining,the proportion of students who choose take out and roadside stall is 41.1%and 31.3%respectively,which is the main reason for the potentiao danger of campus food safety.2.The importance of college canteen to campus food safety is investigated.Firstly,?value of the total reliability of the questionnaire is 0.962,and the KMO value of the total validity is0.961,indicating that the reliability and validity are quite good.The P value of age,grade and the number of meals in the canteen every day in the demographic variables were less than 0.05,indicating that there was a significant difference between the three variables and the overall satisfaction of the canteen.Secondly,through factor analysis,the degree of interpretation of three factors of dining environment perception,product quality perception and service quality perception is 66.591%,which shows that the total variance effect of interpretation is better.At the same time,common degree value of the three factors is greater than 0.4,and?>0.8,indicating that the weight of each factor can be determined.Finally,the satisfaction of each factor is calculated,and the values are 3.13,3.00 and 3.56,respectively.Compared with the“3”in the questionnaire,it shows that the college students are not very satisfied with the three aspects of the canteen,students'satisfaction about the canteen is generally low.In the regression analysis,R~2=0.627,adjusted R~2=0.625,indicating that the regression equation has a good goodness of fit,with values of 0.561,0.292 and 0.476 respectively,indicating that the impact on the overall satisfaction of the canteen is ranked in the order of dining environment quality,service quality and product quality.To sum up,due to students'lack of food safety awareness,the increase of off-campus diet and the low expectation of satisfaction with on-campus canteen,the food safety problem on campus is more prominent.To further improve the food environment around campus,improve the food infrastructure,strengthen the management of the canteen,improve the management system,and do a good job in food safety management are the important ways to solve the problem of food safety on campus.
