With the economic and social development of our country and the change of people's diet structure,the incidence of a series of chronic diseases such as obesity is rising.The current weight loss methods mainly include surgery and drugs.Due to the small side effects of dietary intervention and the consumption of low glycemic index(GI)food,it will not cause dramatic fluctuations in blood glucose,which can continue to supply energy and provide satiety for a long time,So it is ideal for people who lose weight.This article mainly takes potato whole flour as the main research object,and develops a meal replacement powder suitable for obese people by improving pre-treatment methods and functional factors.(1)The water,protein,fat,reducing sugar,and soluble solids content of fresh potatoes were measured for 16 types of potatoes.The main quality evaluation indicators were high protein content,low reducing sugar and high soluble solid content.The weight allocation scheme is determined by the compulsory decision method,and D6 is obtained as the best variety from the weight score.(2)Fresh potato D6 was prepared with different ripening methods to prepare whole potato powder.After the potato slices were cooked,they were directly refrigerated at 4?for 12 h,24 h,48 h,and ultrasonically combined with 4? refrigerated treatment for 12 h.The highest potato resistant starch content was obtained in 24 h.PNPG method was used to determine the inhibitory effect of polyphenol-potato whole powder compound on ?-glucosidase.As a result,the proanthocyanidin-potato whole powder compound powder had the strongest inhibition on ?-glucosidase,which was 43.01%.The GI value of proanthocyanidin-potato whole powder composite powder was lowest by in vitro digestion,which was 52,which belongs to low GI raw material powder.(3)The effect of water extract of proanthocyanidin-potato whole powder composite powder on cells with disordered glucose and lipid metabolism in HepG2 was further studied.According to the results of CCK-8,the water extract of proanthocyanidin-potato full powder composite powder was tested at 1mg/mL-2mg/mL.The cells are not toxic.Compared with the model group,the glucose content of the cell supernatant was significantly reduced at 1mg/mL(p <0.05),while the intracellular triglycerides(TG)and total cholesterol(Total Cholesterol(TC)content were significantly reduced(p <0.05),the intracellular TG content decreased by about 90%,and the intracellular TC level decreased by about 50% at a concentration of 2mg/mL.It indicated that the water extract of proanthocyanidin-potato whole powder composite powder had a certain effect on the regulation of glucose and lipid metabolism.(4)Taking the GI value and sensory score as the main evaluation indicators,and assisting the use of intelligent senses such as electronic nose and electronic tongue to determine the optimal formula for potato weight loss meal replacement powder: the total amount of potato powder is 45%,and the amount of konjac powder is 2% The added amount of grape seed extract is 0.125%,and the sensory score of the meal replacement powder prepared under this formula is 77.5.According to the in vitro digestion characteristics,the GI value is 45.94,which is a low GI food.
