Seed-used watermelon is a variety of common cultivated watermelon subspecies.Its growth characteristics are temperature and heat tolerance,drought resistance and waterlogging resistance.It plays a vital role in agricultural economic crops in northwestern China.Seed melon is rich in various trace elements and nutrients required by the human body,and has high comprehensive utilization value.However,due to its biochemical characteristics,seed melon products cannot use traditional food heat sterilization technology,and lack of efficient processing and production equipment.Therefore,a reasonable and effective sterilization method is a major key technical problem that restricts the production and sales of freshly squeezed seed melon juice.In order to maximize the preservation of the unique flavor and heat-sensitive nutrients of seed squash juice,improve the sterilization process effect and ensure the health and safety of freshly squeezed seed melon juice.Extend the shelf life of products,starting with the physical and chemical properties and sterilization characteristics of freshly squeezed seed melon juice,applying the electron accelerator irradiation sterilization technology and microwave sterilization technology to the sterilization process of freshly squeezed seed melon juice,targeted non-thermal sterilization The research on the sterilization effect of the equipment on seed melon juice is considered from two aspects of practicality and high efficiency,focusing on the research of the mechanism of non-thermal sterilization equipment in the sterilization process of seed melon juice,comparative analysis of sterilization effect and equipment optimization equipment to increase the reliability of actual production,Adapt to the seasonality of seed melon juice processing and extend the production week of seed melon deep processing At the same time can improve the utilization value of watermelon.In order to meet the high-efficiency non-thermal sterilization requirements of freshly squeezed seed melon juice,this paper carried out relevant experimental research on the sterilization effect and sterilization mechanism of electron accelerator irradiation sterilization technology and microwave sterilization technology in seed melon juice sterilization process.The specific research content and main The conclusion of the test is as follows:(1)Using fresh seed melon produced locally in Gansu Province as the test raw material,he pHysical and chemical properties and sterilization characteristics of freshly squeezed seed melon juice were tested,and the sterilization mechanism of seed melon juice was analyzed.Compared with the traditional thermal sterilization process,non-thermal sterilization technology is more Suitable for industrial sterilization of seed melon juice.(2)Taking the irradiation dose,irradiation time and penetration depth of electron beam irradiation of electron accelerator in the process of irradiation and sterilization of seed melon juice as test factors,the influence of each test factor on the physical and chemical properties and sensory quality of seed melon juice was analyzed.When the irradiation dose is 6~8kGy,the irradiation time is 10~15s,and the electron beam penetration depth is 16~32mm,the total number of seed melon juice colonies is less than 100CFU/ mL,and the number of coliform bacteria is less than 1CFU/ mL.The number of yeasts is less than 10 CFU/mL,which can effectively retain 92.8% of the soluble solids.The total sugar retention rate is up to 93.4%,the total acid content is reduced by about 44.5%,and the Vc content loss rate is 34.6%.The increase of the variable index and the decrease of PH have a significant delay effect.(3)According to the research on the influence of irradiation parameters on the germicidal effect of seed melon juice,taking the radiation dose,irradiation time and penetration depth of electron beam irradiation as the test factors,the total number of colonies,total sugar content and total acid content of seed melon juice,Vc content as the test index;according to the Box-Behnken test design principle,through the response surface test to optimize and analyze the process parameters of the electron accelerator in the process of irradiation and sterilization of seed melon juice,taking into account the actual production needs,when the irradiation dose is 6kGy,When the irradiation time is 10 and the penetration depth of the electron beam is 32 mm,the total number of seed melon juice colonies is less than 90 CFU/mL,the number of coliform bacteria is less than 1 CFU/mL,the number of molds and yeasts is less than 9 CFU / mL,and 93.2% of the soluble solids The material is efficiently retained,the total sugar retention rate can be up to 93.1%,the total acid content drops by about 41%,and the Vc content loss rate is 34.6%.(4)After analyzing and optimizing the process parameters of the electron accelerator during the irradiation and sterilization treatment of seed melon juice,on the basis of the complete set of high-value full-utilization processing production line independently designed by the research group,he electron accelerator sterilization device was completed when the seed melon juice product was developed.Optimized equipment,coordinated and perfected the production mechanism of the high-value full-use production line of seed melon,production capacity reached 10 T / h;production capacity greater or equal to 80T/day,the solid content of seed melon juice after irradiation sterilization was 2.0%~2.2%,and the recovery rate of reducing sugar more than the 80%,pH value is between 5.1 and 5.3,and seed melon juice output is 7000 T / year.
