Irradiation could kill pesticides and inhibit bacterium.It has good effect on the cereals.Currently,however,there has little studies on the quality of irradiated cereals. Effects of irradiation on cereals were studied. The dosages of electronic beam andγ-ray were 0kGy (not irradiated), 1kGy, 5kGy, 7kGy and 10kGy respectively.Studying the changes of processing, nourishment ,store,eating qualities of cereals.The irradiated cereals were simulated aging 1 year, at temperature 40℃, relative humidity of 70%,studying the changes of store qualities of cereals.Meanwhile,after the cereals were simulated aging 1 year, at temperature 40℃, relative humidity of 70%, The dosages of electronic beam andγ-ray were 0kGy (not irradiated), 1kGy, 5kGy, 7kGy and 10kGy respectively.Studying the changes of processing,nourishment,store,eating qualities of cereals. Besides,experimentale result are analysed from microstructur. The studying found that:Effcet of irradiation on processing qualities of cereals. After the two kinds of rays irridiated, there was no changes of bulk density of wheat, corn, ,and no changes of the roughnes and milled of indica rice and head rice There is a certion changes on the color of cereals.Effcet of irradiation on nourishment qualities of cereals. After the two kinds of rays irridiated, there was no obviouse changes of protein content of cereals The crude fatty increased with the dosage enhancing, but the starch content of corn fell lightly. Effcet of irradiation on storage qualities of cereals.The germination rate of cereals fell markly with the dosage enhancing.When the dose of ray irradiation is 10kGy, the germination rate of cereals is 0.The electrical conductivity of cereals increased with the dosage enhancing,but the wet gluten content and gluten moisture absorption fell.Fatty acid value of rice and corn rised when the dosage enhanced,but the viscosity fell markly. Acid and peroxide value of soybean went up with the dosage enhancing,but the active of lipoxygenase fell when the dosage is over 5kGy.There is no obvious affection when the dosage is below 5 kGy.At the simulated environment, the storage qualities of cereals became worse.After simulated aging 1 year ,the irradiated cereals is better than cereals in 12 month,but the acid and peroxide value of soybean became worse. Effcet of irradiation on eating qualities of cereals.The cooking quality qualities of cereals fell markly with the dosage enhancing, when the dosage is below 5kGy ,the cooking the quality qualities of cereals is accepted .When the dosage is above 5 kGy,the cooking qualities of cereals is negative. After simulated aging 1 year,the eating qualities of cereals became worse .It advises that the dosage is below 1 kGy received.It is showed from microscopic observation that different types of different doses of irradiation are affected different degrees damage of grain.The effects of the same dose ofγ-ray irradiation on microscopic was heavier than that of electron beam.
