This study was conducted to investigate the meat quality traits and serum biochemistry indices variations and correlations of farmed Larimichthys crocea.554 two-year-old fish cultured by traditional net cages were randomly sampled.The blood sampling from the tail vein was measured to determine 16 serum biochemistry indices including Albumin?ALB?,Globin?GLB?,ALB/GLB,Alkalinephoshpatase?ALP?,Aspartatetransaminase?AST?,Alanine aminotransferase?ALT?,AST/ALT,Caramide azotes?BUN?,Serum calcium(Ca2+),Total cholesterol?TC?,high-density lipoprotein cholesterol?HDL-C?,Low-density lipoprotein cholesterol?LDL-C?,TC/HDL-C,Glucose?GLU?,Triglyceride?TG?and Total protein?TP?.Dorsal muscles were synchronously sampled to determine 6 texture properties?hardness,adhesiveness,cohesiveness,springiness,gumminess and chewiness?and muscle chemical compositions?proximate compositions and fatty acids composition?.Meanwhile,several regression equations between partial muscle quality traits and serum indices were obtained.The main results were as follows:1.Meat quality traits of farmed L.croceaThe mean content of crude protein,lipid and ash in muscle of two-year-old farmed L.crocea?mean body weight was 320.33 g?were 51.22%,44.71%and 3.03%,respectively.In fatty acid profile of muscle,the total MUFA content presented the highest value,accounting for 42.20%of total fatty acids,followed by SFA?34.15%?and n-3HUFA?15%?.C18:1 was the primary MUFA,amounting for almost 80%of total MUFA.The crude lipid level,C16:0 and C20:5contents in muscle showed significant difference?P<0.05?and C16:1 showed remarkably significant difference?P<0.01?,whereas no difference was observed among the rest muscle chemical components between female and male fish?P>0.05?.The dorsal muscle texture properties of female and male fish were presented respectively as below:hardness 18.91±7.19 N and 20.07±6.51 N,adhesiveness 0.15±0.05 MJ and 0.14±0.05 MJ,cohesiveness 0.49±0.06 and0.48±0.05,springiness 1.33±0.24 mm and 1.33±0.17 mm,gumminess 9.21±3.83 N and10.18±3.22 N,chewiness 12.59±6.53 MJ and 13.68±5.04 MJ.2.Serum biochemistry indices of farmed L.crocea.16 serum biochemistry indices of farmed L.crocea were measured.The levels of ALB,Ca2+,TC,GLB,HDL-C,LDL-C,TG and TP showed remarkably significant higher in females compared to males?P<0.01?.Conversely,the levels of GLU and ALP in females were significant lower than those of males?P<0.05?.There were no significan differences among other indices?P?0.05?.The variation coefficient of ALT in serum was highest,and followed by AST,ALP,GLU,LDL-C and TG;whereas the lower variation coefficient were observed in Ca2+,HDL-C,ALB,GLB.Overall,variation coefficients of serum biochemistry indices in male were slightly higher than those in female.3.Correlation analysis among meat quality traitsThe results of correlation analysis among meat quality traits showed that the crude protein existed strong positive correlation with crude ash?P<0.01?,whereas presented strong negative correlations with crude lipid and all fatty acids components except C20:4.There had no correlation between crude protein and C20:4.Both of crude ash and crude lipid showed significant?P<0.05?or very significant?P<0.01?correlation with other chemical components.There were significant or very significant correlations among texture properties,whereas no correlations were observed between texture properties and chemical components.4.Correlation analysis between meat quality traits and serum biochemistry indicesMeat quality traits existed strong correlation with serum biochemistry indices and many were significant or very significant.Such as hardness with AST/ALT,BUN with C20:4,C22:5,C20:5,C22:6 and?PUFA,C16:0 with TC/HDL and?SFA,LDL-C with crude lipid,C16:0,?SFA,C18:1,?MUFA,C20:5 and n-3HUFA all showed very significant positive correlation?P<0.01?,whereas the LDL-C showed very significant negative correlation with crude protein.However,AST/ALT with crude ash,adhesiveness,gumminess and chewiness,both Ca2+and BUN with crude lipid,C24:1 and n-3HUFA,TC with C20:5,TC/HDL with crude lipid,C18:0,C16:1,C18:1 and?MUFA,LDL-C with C18:0,C16:1,C22:5,C22:6 and?PUFA,TG with crude lipid,adhesiveness,C16:0,C18:0,?SFA,C18:1,?MUFA,C22:5,C20:5,C22:6,?PUFA and n-3HUFA all existed significant positive correlation.While the crude protein showed significant negative correlation with TC,TC/HDL and TG.5.Principal component analysis of serum biochemistry indices16 serum biochemistry indices were performed to select the first five principal components,which of eigenvalues were greater than 1 and their cumulative contribution of variance up to78.67%,as principal component?by principle component analysis.It included ALB,Ca2+,GLB,HDL-C and TP,which reflected the whole frame of L.crocea serum biochemistry indices and their cumulative contributions of variance,was up to 31.87%.The principal component?included 4 biochemistry indices?TC,TC/HDL-C,LDL-C and TG?and their cumulative contributions of variance accounted for 16.54%.while the cumulative contributions of variance of principal component?,?and?were 12.21%,10.19%,7.86%respectively.As for the principal component?,it contained 2 biochemistry indices of ALT and AST.Also,the principal component?contained 2 biochemistry,namely ALB/GLB and ALP.However,the principal component?contained GLU only.In conclusion,serum biochemistry indices of cultured L.crocea could be classified into five main parts by principle component analysis.6.Establishment of optimal regression equationsBy path analysis,9 representative factors,namely LDL-C,HDL-C,BUN,AST/ALT,TG,GLB,TC/HDL-C,ALB/GLB and Ca2+,which could be as indicators of meat quality traits,were selected to establish regression equations for preliminarily predict meat quality traits of farmed L.crocea.
