Effects Of Facilities Cultivation On The Grape Berries Quality And Phenols Accumulation

Abstract/Summary:
Grape(Vitis vinifera L.)contain a large number of phenolic substances,sugars,organic acids and other substances,which not only have an important impact on the quality of grapes,but also are beneficial to human health as bioactive functional substances.In recent years,the cultivation area of facilities grape has been expanding year by year,accounting for 23.36% of all China’s viticultural area.Therefore,the research on the impact of facilities viticulture is extremely urgent.In this paper,6-year-old ’Zao Hei Bao’ and’Summer Black’ grapes were used as experimental materials to clarify the influence of facilities on the quality of grapes berries and phenols accumulation by comparing the differences of grapes under cultivation conditions of facilities and open field.The results showed that:1.During the growth and development of grape berries,total phenols and flavonoids showed a declining trend,and reached the minimum value at the mature stage.Plastic tunnel was not conducive to the accumulation of total phenols and flavonoids in grape berries after veraison.However,greenhouse was conducive to the accumulation of total phenols and flavonoids in grape berries before veraison.The content of total phenols and flavonoids in ’Summer Black’ were higher than ’Zao Hei Bao’ of the same period.2.During the growth and development of grape berries,total flavan-3-ols showed a decreasing trend and reach the minimum value at the mature stage.The total flavanols decreased firstly and then increased,and reached the maximum at young fruit stage.The content of total flavanols in greenhouse grape berries was significantly higher than that in open fields before mature stage,and the total flavan-3-ols content in facilities grape berries was not significantly different from that in open fields.For the four kinds of flavan-3-ol monomers,the content of flavan-3-ol monomers in berries From high to low was catechin,epigallocatechin,epicatechin and epicatechingallate.The content of total flavanols,total flavan-3-ols and flavan-3-ol monomers in ’Summer Black’ were higher than ’Zao Hei Bao’ of the same period.3.During the growth and development of grape berries,total anthocyanins showed an upward trend and reached the maximum in the ripening stage.The content of total anthocyanin in grape berries under facilities cultivation after veraison was significantly lower than that in open fields due to the weakening of sunlight and other factors.The content of anthocyanin in ’Summer Black’ was higher than that in’Zao Hei Bao’.4.During the growth and development of grape berries,the content of phenolic acid varied greatly with different regularity.Among them,P-hydroxybenzoic acid changed gently,while protocatechuic acid presented a typical S-shaped fluctuation.The content of phenolic acid in ’Summer Black’ was higher than that in ’Zao Hei Bao’.5.During the growth and development of grape berries,reducing sugar,titratable acid and Vc all presented typical S-shaped fluctuation.Among them,reducing sugar showed a gradual upward trend and reached the maximum at the mature stage.Titrable acid showed a tendency of increasing slightly and then decreasing rapidly,reaching the minimum value at the mature stage.The variation trend of Vc content in the two varieties was different.Facilities cultivation was not conducive to the accumulation of reducing sugar in grape berries after veraison.The content of reducing sugar of ’Summer Black’ was higher than that of ’Zao Hei Bao’ of the same period.The effect of facilities cultivation on titratable acid and Vc was complex and needed to be further studied.
