Inappropriate low-temperature environment will lead to normal physiological and metabolic disorders such as maturation and senescence of harvested vegetables,resulting in abnormal changes in tissue structure,color,and flavor,and reducing the food quality and economic value of fruits and vegetables.Therefore,in this paper,the same temperature-sensitive bananas were selected as experimental materials to study the effects of progesterone treatment on the symptoms of postharvest banana cold damage,changes in fruit quality,antioxidant metabolism,and energy metabolism in storage at 4?.The main results were as follows:1.The cold injury index of banana fruits increased gradually with storage time at low temperature.The cold injury index of progesterone treatmecontrol nt bananas was significantly lower than that of the control.On the 25th day of storage,the banana cold injury index of PROG group was 46.19%lower than that of CK group.The MDA content and relative electrical conductivity of progesterone-treated bananas were also significantly lower than those of the group.These indicate that progesterone treatment can effectively alleviate the cold damage of fruits after harvest.2.This study explored the effect of progesterone treatment on the antioxidant system of bananas stored at low temperatures.Progesterone treatment significantly increased SOD,CAT,APX,GR and other antioxidant enzyme activities of banana fruits,promoted the accumulation of GSH and AsA,enhanced the total antioxidant activity of the system,and significantly improved the ability of active oxygen scavenging in bananas and maintained low levels.The H202 content and superoxide anion generation rate,which will reduce the damage of the active oxygen on the cell membrane,improve the integrity of the cell membrane,and ultimately reduce the cold symptoms of banana fruit under low temperature stress.These results indicate that these results suggest that progesterone treatment regulates the antioxidant metabolism of bananas,and that proline accumulation is associated with increased cold tolerance in bananas.As a means of postharvest preservation,progesterone has certain application value in reducing chilling injury,and provides theoretical support for the application of progesterone in the cryopreservation of other fruits and vegetables.
