Mung bean and sprouts are important food materials in China's dietary structure.They are rich in nutrients.However,due to the long-term orientation of yield as the core,mung bean lacks special varieties in variety breeding and utilization.Therefore,the quality of seeds and sprouts of different varieties of mung bean was studied and evaluated to reveal the relationship between the quality of sprouts and the quality of mung bean.It can provide a theoretical basis for the breeding and utilization of mung bean processing special varieties.This study analyzed and evaluated the quality of mung bean seeds and sprouts from 22mung bean varieties from different production areas in China.The correlation model between mung bean sprout quality and grain quality was established by multiple regression.And this study explored the dynamic changes of hypocotyl elongation and anatomy during the growth of mung bean sprouts.The following important results are achieved:?1?Different varieties of mung bean seeds showed significant differences and variations in physical characteristics,basic nutrients,total phenolics,total flavonoids and antioxidant capacity.The total phenolics,total flavonoids and DPPH scavenging ability of Chongqing lvdou were significantly higher than that of other experimental varieties.Among the indicators,the coefficient of variation of the protein is the is 4.15%at the minimum,and the coefficient of variation of the a value is 161.77%at the maximum.Correlation analysis showed that there are a total of 105 correlation coefficients among indicators,including fourteen highly significant correlations and nine significant correlations.Through the principal component analysis,fourteen indicators compressed into five main component,and the variance contribution rate was used as the weight to obtain the function:F=0.380F1+0.177F2+0.137F3+0.096F4+0.075F5.The 22 varieties were divided into three grades by ranking the scores and clustering analysis of the comprehensive scores.Ankang lvdou,chongqing lvdou and Baolv 200520-2 with relatively good comprehensive characters are high-scoring varieties and clustered into first-class varieties.?2?After germination,different varieties of mung bean showed significant differences and variations in morphological indexes,basic nutrients,total phenolics,total flavonoids and antioxidant capacity.The sprouts of chongqing lvdou had the longest hypocotyls and the highest productivity.The FRAP,DPPH radical scavenging rate and total flavonoids in lvfeng2 sprouts was the highest among the tested varieties.Among the indicators,the coefficient of variation of the water content is 1.56%at the minimum,and the coefficient of variation of the fat content is 24.12%at the maximum.Correlation analysis showed that there are a total of 78 correlation coefficients among indicators,including twelve highly significant correlations and eleven significant correlations.Through the principal component analysis,twelve indicators compressed into four main component,and the variance contribution rate was used as the weight to obtain the function:F=0.430F1+0.185F2+0.103F3+0.092F4.The 22varieties of mung bean sprouts were divided into three grades by ranking the scores and clustering analysis of the comprehensive scores.The sprouts of Lvfeng 2 and ankang lvdou with relatively good comprehensive characters are high-scoring varieties and clustered into first-class varieties.?3?The hypocotyl length,productivity,protein,starch,total phenol,total flavonoids,DPPH radical clearance rate and comprehensive quality scores of mung bean sprouts can be correlated with the quality index of raw mung bean.The correlation analysis showed that the productivity of mung bean sprouts was closely related to the grain width.The protein content of sprout was closely related to the FRAP,L and a values of grains.The content of total phenolics of sprouts was closely related to the 100-grain weight and L value of seeds.Therefore,the indicators of mung bean quality can be used to predict the indicators of sprout quality.?4?With the increase of germination days,the length of hypocotyl,fresh weight,water content and cell length of mung bean had increased.The cells of the hypocotyl of the mung bean sprouts were continuously elongated from approximately round to oblong and their volume was constantly expanding.
