Western-style cuisine,namely the food of western countries in brief,which is a collective name of the food of western countries especially European and American countries,in East Asian people's view.Accurately,western-style cuisine refers to European cuisine or European-style cuisine,which can be divided into French cuisine,English cuisine and Italian cuisine,etc.Western-style cuisine led by French cuisine,together with Oriental cuisine led by Chinese cuisine and Middle Eastern cuisine led by Turkey cuisine is called the world's three major cuisine.Also,western-style cuisine plays an indispensable,core and leading role in world cuisine history.Since the 17th century,when western-style cuisine was introduced into China by diplomats and missionaries of western countries,it has developed and evolved over past several centuries and has been inseparable from people's lives.Especially in coastal or developed cities,such as Guangdong,Shanghai,Beijing and Xiamen,western-style cuisine has prevailed more and more.Compared with traditional well-known Chinese cuisine,people's curiosity about western-style cuisine pushes the increasing number of people join in the western-style cuisine camp.Understanding western-style cuisine culture,mastering western-style cuisine etiquette and enjoying western-style cuisine are not privileges of some people any longer,instead,they are more and more popular.With the development of social economy and the improvement of people's living standard,such trend will be increasingly obvious.In China,continuous development and growth of western-style cuisine have an increasingly important role in pushing national economy.Therefore,the research of western-style cuisine's development in China and the relevant management mode is necessary and urgent.This paper starts with concepts of western-style cuisine,and introduces the relevant culture of western-style cuisine in order to let us have a certain understanding of it.This paper includes the development history of western-style cuisine in China,the process of its introduction into China,the development history of it in several different periods,differences between it and Chinese cuisine,its unique characteristics,and its current development status and the reasons behind such status.Based on these,this paper discusses a management model of western-style cuisine brand and comes up with relevant ideas and solutions.Western-style cuisine industry develops rapidly and features on flexibility and changeability,therefore,it is a field that deserves our study.And with the continuous development of society and economy,western-style cuisine industry in China is bound to have a brighter future.
