In the long process of integration of the intersection, Xinjiang's halal food absorbs the eating habits of the East and West countries, the mainland and various ethnic groups. Halal food is clean, convenient, nutritious and great various. The most representative of the halal food are traditional snacks and dishes, such as roasted whole lamb, roasted lamb string, pilaf, Naren, pull strips, soup pulling films, Fentang, oil incense, and other specialties, which are fashionable in the whole country, not only reflecting the wisdom of the Muslim nation, but also reflecting the folk customs and Islamic culture in Xinjiang. In recent years, with the economic's rapid development in Xinjiang, western fast food such as KFC, Dicos entered into Xinjiang, at the same time, Xinjiang's local fast-food brand Bestfood imitating KFC and McDonald's mode, also rised up rapidly in western-fast-food-style in this not highly competitive area. The rise and prosperity of the tourism industry in Xinjiang, leads to the development of accommodation and catering industry, which results that Xinjiang's halal food becomes a hightlight attracting tourists as well as fruits, songs and dances.Xinjiang-Style Fast Food appeared lately, and developed slowly ,moreover, it is not modern fast food in a sense. In this paper it compares Xinjiang's main economic indicators to U.S.'s and Japanese's during the period when fast-food industry full developed overall the country in the view of the causes of fast food' prosperity. The comparison indicates the current situation and constraints for the development of fast food industry in Xinjiang. Two questionnaires was designed , one of which is a questionnaire survey of the general public, through the comparative analysis of public's different cognition between western fast food and Xinjiang-Style fast food, public's expectations of Xinjiang-style fast food, the popularity of some typical snacks in Xinjiang. The questionnaire helps to analyze the current development , the consumer market and the problems of Xinjiang-style fast food, and also comes as references when Xinjiang-style fast food chooses the right food to develop and publicize. In order to find out the advantage and disadvantage of Xinjiang-style fast food , more than 10 well developed Xinjiang-style fast food restaurant , such as Milaji, Mayflower, the Sushi' beef noodle, Bo Dun, Jiao Hall, Tiantian Liang Pi, Ai Nibayi, Awulali, was thoroughly interviewed and questionnaired, which is this basis to compare specifically with the Western fast food like McDonald, KFC, Bestfood etc.Combined macro-economic environment and Xinjiang-style fast food's own development , we can see the main constraints are political and economic factors, social and cultural factors, Xinjiang-style fast food's own operations. The first two factors are depended on economic development, function of government and industry organizations, but for the third factor,it depends on the improve of the restaurant's management,especially the operation management. According to the comparison in the study and Xinjiang-style fast food's characteristics, the paper presents operation-optimize strategies for Xinjiang-style fast food, which includes four respects, the operation strategy, resource input, the conversion process, resources output, to describe the measures of improvement.
