Food security related to people's health and even the national economy and the people's livelihood, received all levels of the government and the general consumer's high attention in recent years. At present the food poisoning event still assumed the trend of escalation, the toxicant population increases year by year.In the leading causes of food poisoning occurred, the dining health problem is to account for the overwhelming majority proportion. The traditional control method of examine the final product to guarantee food security is unable to implement effectively, because of food is eat immediately. The harm analysis and the critical control point management system"focus on the prevention, but depend on finally product inspection"the characteristic may solve this problem effectively. The harm analysis and the critical control point (Hazard Analysis Critical Control Point, HACCP) manage system is systematic and structural, it prevents the food safety primarily. It has provided one method base on scientific logic that is control biology, chemistry and the physical harms in food, included from raw material to the final food this manufacture entire process harm control, avoided the insufficiency of depend on examination only.This article chooses the XX western-style fast-food restaurant as the study object, as"Food and beverage industry HACCP implement General Guide"what is Chinese country health Department recommend is the foundation, refer to the principle and procedure what codex alimentarius commission (CAC)"the HACCP System And Application Criterion"recommend as the reference, it has consulted the related literature material and collected correlation detection data, carried on the harm analysis to the production process, determined the critical control points, formulated measures of prevent and correct, established the western-style fast-food restaurant production HACCP system, and has analyzed HACCP system's questiones which existd in the application of western-style fast-food restaurant and proposed the solutions.In view of the chain-like fast food industry's characteristic, formulated XX company style HACCP system, it has determined 4 critcal control points, as CCP1: receive the freeze instant food product, CCP2: refrigerating equipment, CCP3: fryer, CCP 4: multifunction boiler. Through the next tack and confirm the scene, it turned out that the HACCP system working condition is good, and correct error promptly.
