In recent years,with the rapid development of economic globalization and the rapid popularization of information technology,china's third industry has been stable,the hotel industry,as one of the first industries to open to the outside world,has gone through the initial stage of development,gradually maturing,and increasingly fierce market competition.The market share grab of international hotel group,the rapid expansion of domestic budget hotels and the introduction of "eight regulations" have made our domestic star hotels enter the era of micro-profit,the competition between hotel industry enterprises is not limited to the chain scale and service quality,but also the management level.However,the management activities of high-end hotels are complicated by the diversification of products and services,for example,the rich inventory multilateral demand,changeable planning and some uncollectible particularities make the inventory management of the hotel industry full of loopholes,which directly affect the level of capital appropriation and the efficiency of asset operation.Therefore,the hotel must manage the inventory scientifically and effectively,realize the improvement of operation management level and economic benefit,and thus stand out in the fierce market competition and occupy a larger space for survival and development.This paper chooses Y hotel,the only five-star hotel in L city,as a case study,starting from the background of hotel industry,this paper expounds the purpose and significance of the research on the inventory management of the hotel industry,secondly,the research results and theories of inventory internal control,inventory management strategy and hotel inventory management strategy are summarized,then,based on the field investigation results of Y hotel,the basic situation and current situation of inventory management were introduced and analyzed in detail,diagnose Y hotel's current inventory management problems and its causes:lack of scientific plan formulation,single supplier selection indicators,inadequate inventory quality acceptance,improper storage place and method,lax control of incoming material approval.Finally,based on the relevant theoretical knowledge,practical experience and the discussion with hotel managers and grassroots employees,five specific Suggestions for improving the inventory management of Y hotel are given:optimize the inventory management process,the specific measures include scientific purchasing plan,careful selection of purchasing objects and strengthening inventory acceptance audit.Improve the inventory management method,improve the inventory management level of hotel Y through the combination of ABC method and CVA method.Adopt VMI management mode,and build a stable supplier team from four aspects of supplier introduction process,supplier classification management,supplier performance management and supplier incentive mechanism,so as to guarantee the implementation of VMI management mode.Improve inventory management system,including sound inventory quality acceptance system and establishment of internal control examination system.Improve inventory and storage conditions.Through the in-depth study of the case enterprises,this paper provides ideas and inspiration of the scientific and effective inventory management for Y hotel and similar enterprises,to help them select the optimal inventory management method according to the macro environment and operating characteristics,improve the inventory management system,standardize the inventory management process,and realize the improvement of inventory management level.
