rural In recent years,with the increasing income of residents and the rapid development of the catering industry,there has been a substantial increase in the number of eating out for both urban and rural residents.So,how often is the eating out of rural and urban residents?What is the difference of dietary structure between eating out and eating at home?What are the factors affecting urban and rural residents'eating out?Answering these questions will help us to have a better understanding of eating out and dietary structure of and urban residents,promoting the healthy development of China's catering and food industry.Meanwhile,research on the dietary structure of eating out for both urban and rural residents can objectively reveal the consumption structure of residents and consumer spending intentions in a certain period of time.It is helpful to study the changing trend,so as to guide food manufacturers to provide safe,high-quality,nutritious and healthy food.It also provides guidance for relevant departments to guide residents' health food consumption,formulating the food supply,subsidies and agricultural product processing policies.If it is in line with results of this study,the growth of the eating out is faster than the increase of income.The rapid development of the catering industry and the change of people's food consumption concepts are just as irreversible as income growth.They have an important impact on people's eating out and the entire food consumption level,which further highlight the role of eating out in determining the future level and structure of food consumption.Based on the descriptive analysis of the proportion of the urban and rural residents' per capita consumption and diet of eating out in China,the difference of dietary structure between urban and rural residents in China is analyzed.Based on the analysis of the influencing factors of the eating out of urban and rural residents,the Double-hurdle model of the two-stage eating out is established and the parameters of the model are estimated,analyzing the intrinsic relationship between the possibility of participating in eating out and its consumption.The study indicates that China's urban and rural residents have an increasing large proportion in the eating out;eating out has gradually become one of the important determinants of food consumption growth and structural changes;income growth is the main determinant factor of eating out;consumer personality and family characteristics have a significant effect on the eating-out;there is a significant difference between the dietary structure of eating out and the proportion of eating out for urban and rural residents.Finally,according to research conclusions,it is suggested that future research and forecasting on food demand should consider changes of eating at home and eating out,as well as changes in influencing factors;this paper still needs further discussion,namely this study only points out the distinct difference in the structure of eating out and eating at home from the general statistical description.However,what factors determine this difference,what factors determine the budget allocation for eating out and eating at home,and how to include eating out in the entire food consumption system still needs the further study.
