At present,China’s edible fungi mainly use households as production units,with manual production as the main production mode,and it is a labor-intensive industry.The sporadic and scattered small-scale production makes the edible fungus industry less able to withstand risks.Factory production is an effective way to reduce costs and increase production.It is also the future development trend of the edible fungus industry,which can inject new vitality into the development of the edible fungus industry.Factory production can realize the annual production of edible fungi,maintain the sustainable and stable development of the edible fungus industry,and make up for the problem of insufficient supply of edible fungi due to seasonal production of free-range households.However,the cost of industrialized production of edible fungi is too high.How to improve the production yield and production performance of edible fungus factory production is an important issue to be solved in the future development of the edible fungus industry.Based on the survey data,the paper compares and analyzes the production cost benefits of edible fungi factory and farmer production based on the survey data of the production farmers and factory production enterprises in the main edible areas of edible fungi in Shandong Province.Among the 41 edible mushroom factory manufacturers,the average production cost from low to high is Pleurotusostreatus,Flammulinavelutipes,Pleurotuseryngii and Agaricusbisporus.From the perspective of income,the average yield of the industrial production of Agaricusbisporus was the best,followed by Pleurotuseryngii and Flammulinavelutipes.The average yield of factory production of Pleurotusostreatus was worse than that of the other three edible fungi.In comparison,Pleurotusostreatus has better production performance under the two production modes of factory production and farmer production,but it is more suitable for farmers to produce.The performance level of Flammulinavelutipes in the two modes is quite different,in the current market.It is more suitable for factory mass production under the constraints of environmental protection policies.The multivariate linear regression model was used to analyze the factors affecting the production income of edible mushroom farmers and factory production.It was found that the net income of edible mushroom producers and farmers was affected by the sales price of edible fungi,the annual output of edible fungi,the cost of raw materials and the cost of fixed assets.Impact.Using the DEA model to compare the productivity of the two production models,the study found that the average efficiency of technical efficiency,pure technical efficiency and scale efficiency of edible fungus production enterprises is higher than that of edible fungi production,and the scale of production and operation is relative to the production of edible fungi.Farmers are better.The production efficiency of edible fungus factory production is affected by the degree of mechanization,production management level,type of processed products and production life.
