Satisfaction is often used to describe the subject's subjective evaluation of a product, service, policy, etc. The research field of satisfaction involves a wide range. It is often used in the management of enterprise departments and government agencies. As an important part of people's livelihood, food safety is related to everyone's health and national stability.Increasing surveys on food safety satisfaction have helped relevant departments understand the status of food safety and solve problems in food safety in a timely manner. Therefore, research on issues related to the public's satisfaction of food safety can provide relevant departments with a basis for decision-making and method reference. However, after rationally designing the questionnaire and collecting reliable survey data,it is especially critical to choose a reasonable data analysis method.Ignoring the characteristics of the data and randomly applying some statistical methods to analyze the data will mislead the research conclusions. In addition, using a single method to analyze the data may lead to certain limitations in the research conclusions, and it cannot fully reflect the facts contained in the data. Therefore, considering the ordered classification characteristics of the data and the existence of latent variables,a multi-level score estimation model and structural equation models of ordered classification variables are established. This paper is based on the data of Public satisfaction survey on food safety in Kunming.First, the Bayes estimation model for multi-level scoring was used to obtain the public satisfaction estimates from high to low: 46.13%,32.73%,16.40%,4.07%,0.67%.Then,the three-factor and four-factor models are established and compared, and the four-factor model is better than the three-factor model.Further, the linear and nonlinear structural equation models are established and compared, and it is concluded that the nonlinear model is better than the linear model. In addition, the impact of the four potential variables on food safety is significant and positive;the interactive effect of information disclosure and major food types is significant and positive and theinteraction effect of regulatory enforcement and major food types is significant and negative. Finally, according to the analysis results, some suggestions were put forward for the reference of relevant departments.
