The raw material of sour horse milk is fresh horse milk,a milky white or yellowish acid and low alcohol milk made by natural fermentation with natural starter mixed with lactic acid bacteria,yeast and other microorganisms.Because of its unique nutritional structure,sour horse milk is beneficial to the activities of digestive tract,circulatory system,nervous system,hematopoietic organs,renal function,endocrine glands and immune system.This series of medical and health care functions and bioactive substances are closely related to the species and biological characteristics of lactic acid bacteria(Lacticacidbacteria,LAB)in sour horse milk.therefore,in order to screen high-quality lactic acid bacteria candidate strains with probiotic potential.In this experiment,lactic acid bacteria were isolated from sour horse milk samples from Xilingol League.Species were identified by regular morphology,physiology,biochemistry and molecular biology,and their biological characteristics such as growth curve,movement,acid production,pH tolerance,bile salt tolerance,Na Cl tolerance,temperature tolerance,fermentation performance,optimum growth conditions and bacteriostasis were studied.The results showed that: In this experiment,3 strains of lactic acid bacteria were successfully isolated from Ximeng acid mare milk samples.Lactobacillus plantarum,Pediococcus acidilactici and Lactobacillus acidophilus,respectively.The two strains of Enterococcus were Enterococcus lactate and Enterococcus faecalis,respectively.Among them,37? was the optimal clotting temperature for each strain.Lactobacillus plantarum has a wide range of adaptability to temperature and has a good bacteriostasis effect on pathogenic strains.It is more adaptable to Na Cl concentration.Compared with other isolates,Enterococcus faecalis had better acid production and could adapt to a wider range of acid and alkali environments.Petiococcus lactis had good adaptability to different bile salt concentrations.Drug sensitivity tests showed that Enterococcus lactate was sensitive to more drugs.Through the above research,the strains with strong growth capacity,high survival rate and good adaptability were analyzed and screened to comprehensively evaluate their potential as probiotics,in order to fully exploit the unique lactic acid bacteria resources in this region and provide basic conditions for the research and development of compound microecologics.
