With the high intake of sugar,many kinds of diseases,such as diabetes,obesity,and chronic degenerative diseases,cause great harm to human health.The popularity of the concept of diet health has increased people's demand for sugar free food,resulting in the increase of sugar free food market by 4.8% year on year.As a typical sugar free food raw material and sugar substitute,crystalline maltitol has been widely praised by people.Although crystal maltitol had been on the market for more than 20 years,because of its long production line,many processes,many key points and complex production process,the output and quality of crystal maltitol had been seriously restricted.In order to understand the key points and difficulties of maltitol production,in this paper,from the actual production situation,various key process parameters of maltitol production are pointed out,and an in-depth study is carried out.The contents and results of this paper are as follows:1.Optimization of DE value during the liquefaction process in sugar production and the use of high temperature 135°C for enzyme inactivation.The energy consumption was reduced by 26.87% and the efficiency was increased by 74.98% by using a jet water heater to inactivate the enzyme in the saccharification solution.The production parameters optimized for the liquefaction process to reach more than 90% maltose content were:135°C inactivation of liquefied liquor,DE value of 4.00-5.00,?-amylase,prululanase and maltotriose enzyme additions of 698.93 g/t,659.00 g/t and 818.61 g/t,respectively.2.Optimize the alkali addition process in the hydrogenation process and change the alkali addition process in the process to adjust the pH of the feed syrup.The new improved process can make the maltitol content in the hydrogenation solution reach 88.37%,and in winter,the maltitol content can be increased by 2.32% and the purification yield can be increased by 5.0%.In summer,the maltitol content could be increased by 3.9% and the yield could be increased by 9.4%.Optimization of important parameters such as temperature,pH,pressure,refraction and catalyst addition ratio,which affect the maltitol content during hydrogenation,revealed three main conditions for obtaining high maltitol content: pressure of 9.71 MPa,pH of 7.66 and temperature of 124.5 ?.3.the purification process of maltitol liquid at the end of hydrogenation was optimized,and the optimal purification feed content ? 88% and discharge content ? 90%were obtained.4.improve and optimize the crystallization process,using a more advanced evaporation-cooling crystallization process,after the optimization of equipment configuration,the crystallization yield reached 62.8% and the efficiency reached a maximum of 0.785 t/h.Compared with a single cooling crystallization process and a single evaporation crystallization process,the single kettle yield of the evaporation-cooling crystallization process can be increased by 27.13% and 27.6%,respectively,and the efficiency increased by The product quality(content,fluidity,moisture)is better than that of single cooling crystallization process and single evaporation crystallization process.
