Basella rubra L.is a herbaceous plant with twining stems.The number of Basella rubra growers in Jiangsu,Zhejiang and Shanghai had increased gradually with vegetable categories were expanded in recent years.Basella rubra was not only rich in nutrients but also contained a variety of medicinal ingredients,which was a nutritious and health-care vegetable.Using Basella rubra resources reasonably and increasing its economic added value were the development direction of Basella rubra industry.Basella rubra spinached for research object in this study.Optimizing the extraction process of Basella rubra pectin by Box-Behnken response surface.Exploring the best preparation process of the edible composite film by Using the Basella rubra pectin.The prepared edible composite film was applied to fresh-cut apples preservation.The study had made innovations in the extraction and application development of pectin from Basella rubra.It provided a certain scientific basis for the comprehensive utilization of Basella rubra resources and the preservation of fresh-cut fruits.The results were as follows:(1)The optimum conditions for extracting pectin from Basella rubra were found to be ultrasonic-assisted extraction for 24 min at a power of 330 W with a solid-to-solvent ratio of 1:24.39,and ultrasonic temperature was 82 ?.The Basella rubra pectin extracyion rate was 19.22% under this optimal condition,and the deviation from the theoretical value was less than 5%.It showed the scientific of response surface optimization for ultrasonic-assisted extraction of pectin from Basella rubra.The Basella rubra pectin was a low-esterified pectin with antioxidant activity which meets the requirements of the national standard GB 25533-2010.It had broad market prospects.(2)The best process for preparing the edible film of Basella rubra pectin were found to be the addition amount of Basella rubra pectin for 6.6% with the amount of glycerin was 7.5 m L at the drying temperature of 57 ?.The sum of TS score and EB score of edible film was 20.43 under this optimal condition,and the deviation from the theoretical value was less than 5%.It showed the scientific of the response surface method to optimize the preparation process for the edible pectin film.(3)The treatment of covering with a film could delay the increase in weight loss rate of fresh-cut apples during storage,maintain the content of nutrients such as Vc and total phenols,inhibit browning,and block microbial infection.The edible film packaging of Basella rubra pectin composite with celery seed essential oil had the best effect of preservation in the treatment groups covered with the film.The edible film of Basella rubra pectin was better than PE film in terms of quality index and browning,but it was not as effective as PE film in terms of microbial infection.
