In order to explore the utilization way of kiwi fruit fermented wine dregs,this paper uses kiwi fruit fermented wine dregs and raspberry tea as raw materials,develops pressed candy and bag tea with good export feeling and flavor,and determines the nutritional components of raw materials and products,so as to improve the comprehensive utilization value of kiwi fruit fermented wine residue and berry tea,and provide new ideas and basis for enterprise production.The main contents and results are as follows1.Analysis of nutritional components in kiwi fruit fermented wine dregs and berry tea.The results showed that the content of protein,fat,moisture,ash,crude fiber,soluble sugar and flavone in fermented kiwi fruit wine dregs were 15.41g/100 g,3.72g/100 g,8.16g/100 g,3.20g/100 g,17.63%,19.54g/100 g and 1.17% respectively.The protein content,fat content,moisture content and ash content of berry tea were 11.36g/100 g,1.55g/100 g,8.70g/100 g and 1.17%,respectively 63 g / 100 g,crude fiber content 4.82%,soluble total sugar content 12.61 g / 100 g,flavonoids content 26.2.Optimization of confectionery formula of kiwi fruit fermented wine dregs and berry tea mixed tablet confectionery.The best formula of kiwi fruit wine dregs and berry tea mixed tablet candy was optimized by preliminary test,single factor test and response surface methodology.The optimum formula was as follows: kiwi fruit fermented wine residue powder 24.0%,raspberry tea powder 6.0%,xylitol 38.6%,maltodextrin 19.6%,corn starch 10.8%,magnesium stearate 1.0%.According to the formula,the tablet is compact,complete and smooth in shape,and has the inherent aroma of kiwi fruit fermented wine dregs and berry tea,with mellow and mellow flavor.3.Optimization of the formula of kiwi fruit wine dregs and berry tea bag tea.Through single factor experiment and response surface methodology,the optimal formula of kiwi fruit wine dregs and berry tea bag tea was optimized.The optimum formula was as follows: 45% kiwi fruit wine residue powder,5% Strawberry Tea powder and 50%green tea powder.According to this formula,the soup has clear color,pure aroma and good taste.It has the inherent aroma of kiwi fruit fermented wine dregs and berry tea,with mellow taste.Through sensory evaluation and water extract content test,the best brewing conditions of kiwi fruit fermented wine dregs and berry tea bag tea are as follows: brewing times 2-3,brewing time 6 min,brewing temperature 100 ?.4.Analysis on the components of confectionery and tea bag mixed with kiwi fruit wine dregs and berry tea.The results showed that the protein content,fat content,ash content,crude fiber content,soluble sugar content,total soluble sugar content and flavonoids content were 5.45g/100 g,3.37g/100 g,7.69g/100 g,1.66g/100 g,6.41%,44.80g/100 g and 2.32%,respectively Protein content was 3.40g/100 g,fat content was 2.41g/100 g,moisture content was 22.80g/100 g,ash content was 7.33g/100 g,crude fiber content was 13.56%,soluble total sugar content was15.11g/100 g,flavonoids content was 12.92%,tea polyphenol content was 13.17%.The two products are rich in nutrients and polyphenols.
