Tert-butylhydroquinone(TBHQ)is widely used to retard the oxidation of oils and fats because of its antioxidant effect and low cost.However,TBHQ is easily to oxidate degraded during the antioxidant process and the main product is tert-butyl-p-benzoquinone(TQ),which has been shown to be cytotoxic and carcinogenic.In this paper,a solid-liquid separation system was constructed to study the regeneration of tert-butyl hydroquinone by ascorbic acid.The synergistic effect between synthetic and natural antioxidants was used to improve the antioxidant capacity,to reduce the use of synthetic antioxidants and to prolong lipid oxidation.Firstly,the antioxidant capacity of ascorbic acid and TBHQ was investigated in a nonseparable system to determine the synergistic antioxidant effect of their combination,followed by a study of the regenerative effect of ascorbic acid on TBHQ based on regeneration theory.To determine the ability of ascorbic acid to regenerate antioxidants,a regeneration study of insoluble dietary fibre(oats,barley and buckwheat)containing natural antioxidant substances was carried out and found that ascorbic acid solution was able to regenerate the antioxidant capacity of dietary fibre with regeneration efficiencies of 64.94%,81.51% and 108.67%respectively.A separable system was constructed to study the effect of ascorbic acid on the antioxidant capacity of TBHQ.Ascorbic acid was encapsulated in ?-cyclodextrin to form a solid-phase inclusion,so that the two antioxidants with different solubilities were in contact with each other but were not mutually soluble.It was found that the antioxidant capacity of the TBHQ solution with the addition of ascorbic acid inclusions was higher than that of the blank group as time increased,indicating that ascorbic acid had a regenerative effect on TBHQ.It was also found that the higher the amount of solid phase inclusions added to the separable system,the higher the temperature and the longer the reaction time,the better the regeneration effect of ascorbic acid on TBHQ.Secondly,the changes in the regeneration process of TBHQ by ascorbic acid were analysed to explain the regeneration mechanism,and the oxidation products of TBHQ were analysed to identify the main product as tert-butyl-p-benzoquinone(TQ).The antioxidant capacity of the TQ solution after the addition of solid phase inclusions was measured,and the antioxidant capacity of the TQ solution increased with the addition of solid phase inclusions,presumably ascorbic acid was able to regenerate TQ to TBHQ by reduction.A separable system was selected to follow the changes in TBHQ and TQ in TQ standard solutions by HPLC,and find that ascorbic acid could partially reduce TQ to TBHQ.Analysis of the redox potentials of TBHQ and TQ revealed that the voltage values of the oxidation and reduction peaks were close to each other,thus explaining the regeneration mechanism that ascorbic acid readily promotes the conversion of TQ to TBHQ.Finally,ascorbic acid-TBHQ was applied to the cream puffs.Ascorbic acid was added to the shell of the puffs and TBHQ was added to the cream to form a separable system for storage experiments.By tracking the peroxide and anisidine values of the creams,it was found that the addition of the compounded antioxidants was effective in inhibiting the oxidation of the creams.The activation energy was calculated according to the Arrhenius equation and the highest activation energy was found in the group with the addition of the compound antioxidant,indicating that the ascorbic acid-TBHQ regeneration system had the highest antioxidant capacity and could effectively extend the shelf life.In this paper,we constructed a separable system to prove that ascorbic acid can regenerate TBHQ.The ascorbic acid-TBHQ antioxidant regeneration system can effectively delay the oxidation of fats and oils in food,and at the same time can reduce the use of synthetic antioxidant TBHQ,which has a good application prospect in the field of synergistic antioxidant.
