Since the Tang and Song Dynasties,China’s social development has entered a new stage.This paper makes a comparative study on the types and production methods of pasta in the Tang and Song Dynasties,and explores the social differences between the Tang and Song Dynasties from the specific perspective of diet,so as to provide a new perspective and argument for understanding and investigating the social changes of the Tang and Song Dynasties from multiple perspectives.There were dozens of kinds of pasta before the Tang Dynasty and hundreds of them from Tang Dynasty to Song Dynasty.During this period,such appellations as steamed cake and Hu cake were used all the time.Tang people called the soup cake "Bu Tuo",which was eaten in many festivals of the Tang Dynasty;people in the Song Dynasty called it "yipitan",which was later used to express it.Pasta with Zhejiang and Sichuan flavor also appeared in the north.Literati and doctors like to use vegetable juice and noodles to make soup cakes for eating,and the variety of patterns is also increasing.In the Tang Dynasty,steamed cakes were steamed pasta,covering a wide range;steamed cakes in Song Dynasty were today’s steamed bread.The number of fried noodles in Song Dynasty was less than that in Tang Dynasty,which may be related to the change of fuel use.The Hu cake of Tang Dynasty should be a pure flour cake with flax on the surface,adding butter to moisten oil,and then baking.In Song Dynasty,most of the pancakes were filled with stuffing,and there were many kinds of them.The scale of Hu cake shop was very large,and the exquisite Hu cake could be used as a state banquet to go to the hall of elegance.Steamed bread in Tang Dynasty was classified as cage cake,while in Song Dynasty there were many kinds of steamed bread,covering a wide range.The change of appellation,the emergence of new varieties and the production methods of pasta in Tang and Song dynasties are likely to change.From these places,we can see the subtle changes in the society of Tang and Song dynasties.The Tang Dynasty inherited from the Wei,Jin,southern and Northern Dynasties,Hu and Han blended,and expanded noodle food;the Song Dynasty inherited the excellent achievements of the Tang Dynasty,the elements of Hu Hua decreased,the Hu Han further integrated development,and the practice was more refined.
