In recent years,the central kitchen has achieved rapid development in China and many large chain catering enterprises with high visibility and influence in many industries have built their own central kitchen in all or part of their business coverage areas.The meaning and specific responsibilities of the central kitchen are clearly defined in the "central kitchen license review specification".It refers to the unit established by the catering chain enterprise,which has independent places,facilities and equipment,completes the processing and manufacturing of finished or semi-finished food products,and directly distributes them to the catering service place.Through in-depth study on the development of central kitchen,the current situation and existing problems of catering industry in colleges,and the successful cases of central kitchen+university operation mode,it can be found that the development of central kitchen operation mode in colleges can solve the problems of high cost of independent operation model in colleges and high price of foreign contracting model,guarantee the food safety,and reduce the difficulty of students’ rights protection.Meanwhile,because the central kitchen carries on the unified cleaning processing,cutting and matching and other rough processing procedures for food raw materials,it can solve the catering standardization in colleges from the source,and it becomes one of the directions of innovation and transformation of catering in colleges.According to the curriculum and students’ eating habits,this paper selects the weather sunny degree,average temperature,wind power level,holidays and the number of daily meals as the influencing factors to build the prediction system of university fresh food demand,and uses the grey prediction model,time series model,multiple linear regression model and neural network model to predict and evaluate the model.In this paper,single delivery time,delivery distance and loading and unloading time are selected as the quantitative indicators of the distribution capacity of the central kitchen.By substituting the prediction results of fresh demand into the quantitative formula of distribution capacity of central kitchen,the matching model of fresh demand and distribution capacity in colleges is constructed.According to the results of the model,there are three research results and conclusions in this paper:First of all,without special activities such as school day and competition,the change trend of daily meal times and daily fresh demand in colleges has obvious periodicity,which fluctuates slightly in working days and drops sharply in holidays.In addition,the prediction system of fresh demand constructed in this paper is not only suitable for colleges and universities,but also for other institutions,enterprises and institutions with relatively fixed working cycle.Moreover,the data of the prediction system is easy to obtain,and the practical application is less difficult.The second is to provide direction and suggestions for the optimization of the distribution capacity of the central kitchen.That is to say,in the practical application,we can analyze the differences between the theoretical distribution ability and the actual distribution ability,find out the problems in the distribution process,and clarify the direction of the optimization of the distribution link.Finally,the distribution capacity of the central kitchen can be used as one of the distribution service evaluation indicators,which means that after providing multiple distribution services to the same distribution node,it can judge the fresh quality of each distribution service within the unit time and distance.Moreover,according to the difference of each distribution ability,we can evaluate the quality of distribution service and the performance of distribution personnel.To sum up,this paper has certain feasibility,innovation and considerable economic benefits in the research of fresh demand prediction and distribution capacity of colleges under the operation mode of central kitchen+colleges and universities... |
